Chicken Marsala, Steamed Broccoli, Oven Baked Potatoes May 31, 2012

Tonight for dinner my mom made chicken marsala, steamed broccoli, and oven baked potatoes. It was phenomenal!! I think everything tastes better when my mom makes it. Sorry I have been MIA lately. I spent the last 5 days in Toronto for a conference and didn’t have regular internet contact. I had more fun than I thought I would though. Now I am at my parent’s house for a few days to visit with them since I’m not sure I’ll have time to again until the end of July for our family reunion. I can’t believe I only have 8 weeks of class left. I am going to go do a little shopping with my mom this evening. It’s almost 7pm though and most places close at 9pm so we better get moving if we want to see anything. It feels good to be home though, just like high school. Everyone was working all day so I got to hang by myself. I should have been studying for oral boards but maybe tomorrow ha!

 

Verry Berry Greek Yogurt, Fresh Mango May 25, 2012

This morning for breakfast I am having my last Chobani champion verry berry Greek yogurt with a fresh mango. I was nervous this mango wasn’t going to be pretty to eat but it worked out — so sweet and delicious. It is unbelievably foggy out today, I can barely see out the windows. I actually woke up freezing too which is soo rare with this muggy weather. Thank God for AC it was sooo relaxing last night. It will be even nicer to pack for Toronto in the AC since yesterday when I did a small amount of packing I was already getting warm from moving around. This morning I only have class from 8am-12pm which is beautious. I was considering going to AAA to get a travel Visa card to put money on but it’s just not close and I’m not sure it’s worth the trip/energy. Hopefully lots of places will taken the American dollar. Alright time to get a moving this morning. Catch ya at lunch!

 

Savory Four Cheeseburger, Corn on the Cob, Guacamole with Tortillas May 24, 2012

Tonight for dinner I made a savory four cheeseburger with sharp cheddar, ketchup, and lettuce with corn on the cob and homemade guacamole with tortilla chips. This was suchhh an amazing dinner! I wanted to use up foods I have since I am leaving for Toronto tomorrow and this was a perfect meal. The boy loved it too. We are both super full and satisfied. I’m so glad I don’t have any school work to do tonight. I just have lecture 8am-12pm tomorrow then I can come home and pack. I did put a few things a side today but I didn’t have much desire. I hate packing too early as well because then my clothes get wrinkled or I pack things I need to use before I go. I might need to do some last minutes errands but we’ll see. I stopped today and got apples/ranges so I will bring about 4 each of those and some granola bars for breakfast. Tonight I get to hang with the best boyfriend ever since I won’t see him for 10 day! :(

 

Verry Berry Greek Yogurt, Pear

This morning for breakfast I am having a Chobani Champions verry berry Greek yogurt and a pear. I want to finish these yogurts up before I leave for Toronto tomorrow so one today and the last for tomorrow. I am glad I really enjoy them though. I still have some fruit left but I definitely want to go to Produce Junction after class today to pick up bags of apples and oranges, and maybe something else. I need to get them for my trip for meals/snacks and those fruits travel well. I may also stop and get some granola bars or something too or scour the store for some good travel foods. Did I mention I didn’t pack at all yet? Eeeek! I have all afternoon essentially though so we are finished at 12:30pm today. So I am going to run my errands then, come home to eat lunch, and then the boy is joining for dinner since I won’t see him for 9 days booo. Alright time to last minute study for my genetics quiz!

 

Shrimp & Veggie Stir Fry Over Noodles May 23, 2012

Tonight for dinner I made a shrimp, peas, carrots, and egg stir fry with NoOodle shirataki noodles. I never bought this brand but the boyfriends mom sent him a case and he wasn’t a fan so I inherited them :) I basically just sauteed everything together with soy sauce, garlic powder, and onion powder and it came out great! I am glad I bought a small bag of frozen salad shrimp. It really comes in handy for a one person meal, which I tend to eat a lot of. This will be delicious and filling before my softball game tonight. It is soo muggy out though I really hope it cools down. I had class all day today and the afternoon was especially long. We had our first behavioral medicine/psychiatry class and it was brutal. The professor has to be close to 80, wears a full suit with a bow tie (everyday), and lectures with no powerpoint, notes, or any visual aides. It is rough. I don’t think psychiatry is a field I’ll be going into ha!

 

Ham & Cheese Sandwich, Cucumber Slices May 22, 2012

Lunch today is also a repeat of yesterday (well the last two days!) — ham and extra sharp cheddar cheese with lettuce on toasted whole wheat bread with cucumber slices. Once I get something in my head and I actually like it I can’t think of anything else, so of course this lunch resurfaces. This further reinforces what an impact real cheese has on my palate ha. So after my long day, the plan is to go to the boyfriend’s for dinner. It will be nice to not have to cook (hopefully). I have a feeling I’m going to be extremely tired so hopefully I don’t pass out while eating. I really need to get back into a gym routine so I can have some more energy, or at the very least speed my metabolism up. I have to pack a list today as well to pack for Toronto. I can’t believe I am leaving on Friday. When my friends and I booked our hotel for the AAPA conference it seemed sooo far off. I guess time really does fly!!!

 

Verry Berry Greek Yogurt, Fresh Pineapple Chunks

Today for breakfast I am have a repeat of yesterday — Chobani champions verry berry Greek yogurt with fresh pineapple chunks. I wanted to finish up my pineapple and I didn’t feel like cooking anything real so another yogurt it is. I couldn’t fall sleep until at least 12:30am last night and I have no idea why. I am sooo exhausted this morning. I am absolutely dreading having class 8am-5pm. This schedule I thought might be annoying but alright but after yesterday I can already tell it will be beyond draining. Thankfully, my two friends and I are completely finished with our oral boards study guides. We still need to type of the differentials which are handwritten at this point, but we have to narrow them down because we were way too comprehensive. I am hoping we have time to do that anyway. It’s supposed to rain/storm all week so I’m sure I won’t feel like doing a single thing once I get home. Lunch eats time!

 

Ham & Cheddar Sandwich, Cucumber Slices May 21, 2012

For lunch today I am having a ham and extra sharp cheddar cheese sandwich with lettuce on toasted whole wheat bread with cucumber slices. I absolutely devoured this yesterday and I knew as soon as I thought of what to bring for lunch today this would be it. Once again, the cheese absolutely made it and I definitely need to buy it more often. I only have class until 3:30pm which is kind of nice. Any class time will be long though after the weekend and just having finals for the week prior to last. Hopefully the new material will be interesting but that may be too much to ask as I have a geriatrics lecture from 8am-12pm ha. It is pretty gloomy out today and I think it rained last night. Pretty sleeping weather of course. I’m sure I will want to crash when I come as usual. I guess it’s better than snacking though. I’m trying to kick that silly habit where I have to eat something as soon as I walk in the door. No snacks for me today!

 

Verry Berry Greek Yogurt, Fresh Pineapple

This morning for breakfast I am having a Chobani Champions verry berry Greek yogurt with fresh pineapple. I used to buy this yogurt like two years ago and loved it. Then I got off it for a while and now I am back. I like the smaller cups and that they have fun flavors. These are nice to have any time of day. Well I am up bright and early for the first day of my summer semester. I start every single day at 8am and go until 4 or 5pm most days. We have been warned it is a brutal draining semester from all the material as well as studying for oral boards, anddddd possibly attempting to enjoy a little wee bit of summer. That is why I want to get the oral boards study guides finished for good between today and tomorrow (after I ask my 2 friends a few questions about 3 of them). That way I review a little everyday and hopefully not get behind and have to cram at the end of July. I am surprisingly optimistic about it. Lunch packing time..

 

Ham & Cheese Sandwich, Sliced Cucumber May 20, 2012

For lunch today I had a ham and extra sharp cheddar cheese sandwich with lettuce on toasted whole wheat bread and a sliced cucumber. This was amazingggg! I never buy cheese because I can’t keep it in the house since I love it so much but I’m really glad I did. It totally made this sandwich a million times better. As much as I love Laughing Cow, this doesn’t hold a stick to it ha. Sooo I have been working on my oral boards study guides all day. They are taking forever and I lost some time to my softball game earlier (which we lost 4-2 boo). I need to step up my pace or I am going to be up late tonight finishing. Not getting them done is not an option since I’m sure my other two friends will have their parts completed and I hate letting people down. WordPress wasn’t publishing my pictures before so I wasn’t sure this was even going to work. I am definitely running out of space so I need to decide if I want to buy more blah :/
