Pork Tenderloin, Green Beans & Potatoes March 31, 2011

Tonight for dinner I had a peppercorn pork tenderloin, steamed green beans, and potatoes. I never buy my pork tenderloin already marinated but I figured I would give this a try and I really like it. It is different than my normal teryaki marinade, but a good different. I definitely enjoy it! So I spent all day babysitting again, but I did get out 1.5 hours early which was awesome. I was able to swing by Trader Joe’s and pick up a few things (few = $22 boo!) I wanted. I love it there! I’m glad there are about 10 grocery stores closer to me than it because I would totally drop way too much money there if I went on a weekly basis. Tomorrow it is back to the lab! I am going to try to get there by 8am so I can leave by 3:30pm. Early to bed for me. Hope Grey’s and Private Practice are good tonight :)

 

Tuna Salad Sandwich, Red Grapes

For lunch today I packed a tuna salad sandwich on a toasted TJ’s British muffin with red grapes. Most people make their tuna salad with mayo but for some reason I don’t like the tuna/mayo combination so I am trying mine mixed with a half wedge of Laughing Cow light swiss, chopped celery, salt, and pepper. So far it tastes pretty good I’m sure I will enjoy it come lunch. I actually used a packet of tuna so I’ll be having this again for lunch tomorrow. I can’t believe this time next week I will be packing for Washington, DC. I feel like it was just yesterday we were talking in lab about far off it was. I guess time really does fly! Now I am to get going so I can miss some traffic. Tonight I will be making the dinner I planned to make last night. Stay tuned!

 

Blueberry Greek Yogurt, Fresh Strawberries

This morning for breakfast I am having a Chobani blueberry Greek yogurt with fresh strawberries. I haven’t bought this flavor in a long time since I tend not to love blueberry yogurt but I didn’t mind it today. It was a nice switch up from my usual flavors. So it has been raining most of the night and I think it is expected to continue today which is no fun! I guess I will be spending the day indoors with the girls again. My little trouble maker has ballet this afternoon so hopefully the break up in her day will make her behave better when she is home. I know it’s stuff to be stuck inside all day. It is for me anyway! Now let me share my lunch with you today..

 

Ham Sandwich, Green Bell Peppers, Apple March 30, 2011

For lunch today I packed a ham and lettuce sandwich on toasted whole wheat bread with half of a sliced green bell pepper and an apple. This is another one of my boring sandwich lunches but I really couldn’t come up with much else when I have to leave in 15 minutes. It will still be good! So I hope the mom gets home on time today. It’s such a long day of babysitting, I hate when she is late. And then sometimes I just want to go home and take a nap and she wants to chat. She’s such a sweetie I can’t not though! Alright, well I have to get moving. Happy hump day :D

 

Crispix with Fresh Blackberries

This morning for breakfast I am having a bowl of Crispix with fat free milk topped with fresh blackberries. So yummy! Well it is absolutely freezing again this morning. This might be the worst spring ever so far brrrrr. I don’t know what I am going to do indoors with the girls the next two days. Looks like I better get creative. I must say I do feel 95% myself today. I am still a little bit stuffed up but it’s nothing I can’t deal with. Thank God I wasn’t sick for a week! Well I am planning to pack a chicken salad sandwich for lunch today but I have no chicken! Back to the grinding board..

 

Cheeseburger, Brussel Sprouts March 29, 2011

Tonight for dinner I had a cheeseburger slider made with beef, Laughing Cow light swiss, and ketcup on a toasted TJ’s ciabattini roll with steamed/broiled brussel sprouts. This was soooo amazing! Granted I was absolutely starving, it was still really good. This was my last little burger I had in the freezer so I will have to remember to make more in the future. They are sooo easy to make as a quick meal — and tasty too! Well today I actually spent 9 hours in lab ahhh! It was such a long day. But because I am babysitting all day Wednesday and Thursday this week, I need to get my 15 hours in between today and Friday. We have to take a 30 minute break after every 4 hours, so I got 8 hours in today and just need to get 7 more on Friday. Long days for the rest of the week here I come! Off to relax tonight :)

 

Turkey Sandwich, Red Grapes, Baby Carrots

For lunch today I packed a turkey and lettuce sandwich on toasted whole wheat bread, red grapes, and baby carrots. Just one of my classic lunches I bring to school. I always promise I will mix it up more and then in the morning I don’t feel like thinking (or planning ahead most days) so this is my default. Good thing I enjoy it! It looks sooo beautiful outside today but something tells me it’s freezing. I will have to step out on the balcony before I get dressed for the day so I know what to wear. Also, I am pretty sure today is my last class for the one class I have to take this semester, and if that’s the case that will be super exciting because it’s such a waste of my (and everyone else’s!) time. Alright, I must get moving. Those of you who pray, please shoot a prayer in my direction today — it’s a deciding day for someone in my family! Thank you <3

 

Egg, Bacon, & Toast Cups, Fresh Strawberries

This morning for breakfast I made egg white, turkey bacon, and whole wheat toast cups with fresh strawberries on the side. They were just as delicious as I remember them being the last time I made them, if not more. I am feeling a lot better today. I am still stuffed up and have a dull headache but it is much better and bearable, and I am no longer achy which is such a relief. I will be going into lab for 9am. I will most likely be doing more staining today and I also have class at 12pm. Most likely I will stay at school until the mid-afternoon so I can get a bunch of work study hours in. Ok, lunch food time…

 

Tilapia, Brussel Sprouts, Baked Potato March 28, 2011

For dinner tonight I made a piece of broiled tilapia, brussel sprouts, and a baked potato. For not having much of an appetite this was delicious! Now if I could get rid of my pounding sinus headache we’d be golden. I think it should be ok to go to school tomorrow. I need a change of scenery if anything. I am sick of my bedroom. My roommate has been studying literally all day (yes since 8am) in the living room so the only time I’ve been out of my room is meal time to grab food and when I went downstairs to check the mail. I’ll be glad to get out of here tomorrow, so hopefully I’ll wake up feeling even better than today.

 

Garden Salad with Turkey, Grapes

Lunch today is a garden salad made with chopped oven roasted turkey, iceberg lettuce, carrots, celery, and Italian dressing with a wasa cracker and some red grapes. I am still not super hungry but I have to eat something, and I have to eat the fresh foods I bought. I am planning to cook a normal dinner tonight so I didn’t want to overdo it with some crazy lunch. After showering and resting this morning I do feel much better. I still can’t breathe great and feel achy but my horribly dull headache is so less drastic and I haven’t been too hot/cold which is great. I’m just going to lay low the rest of the day so I can hopefully be good to go tomorrow morning.
