Meatloaf, Mashed Yams, Steamed Green Beans July 31, 2011

For dinner tonight I have having leftovers — meatloaf, mashed yams, and steamed green beans. I spent most of my day studying and in lab. I did take some breaks here and there to watch some much needed TV. I am sooo glad I have off tomorrow. The boyfriend and I are miraculously both off all day so we want to do something fun. I have a crazy week of finals coming up so I doubt I will see much of him until they are over. I cannot wait to be finished with this semester. Although, I must admit I feel like it flew by. I am not excited to be taking 22 credits in the fall, but I’m glad I hardly have to buy any books since my roommate (whose in med school) is letting me borrow hers. I now sold 3 books on amazon today yayyy! Have a good night :)

 

Scrambled Eggs, English Muffin, Peach Slices

For lunch today I made scrambled eggs (substitute) with shredded cheese, a toasted multigrain english muffin with butter, and a sliced peach. I was in the mood for breakfast food again so that’s what I went with. I definitely prefer regular scrambled eggs over the substitute version though. Something is missing! So I am meeting people in anatomy lab at 1pm. That is is 25 minutes and I still have to eat and drive to school ahhh. I don’t know when I started being late for things but I don’t like it. On the bright side, I posted 7 books on Amazon today and one already sold — of course it’s the one book I posted that I still use and have a quiz on it on Wednesday so that will have to wait a few days ha. Ok, off to school!

 

Waffles with Fresh Strawberries

For breakfast this morning I had two whole wheat waffles topped with fresh strawberries. It was a great way to start off the day. On a sad note, my phone cannot make/receive phone calls or send/receive texts from anyone other than my dad it seems like which is super odd. It’s even intermittent with him. Needless to say I now have to make a trip to Verizon since I cannot live without my phone and I don’t have a landline. I need to run to the bank to deposit some checks and I wanted to stop by Target so I guess I can hit 3 birds in one stone. It’s just annoying because I wanted to study all morning being I am meeting people in the afternoon to review for lab and I’m not sure how much I know. Oh welllllll c’est la vie!

Tonight for dinner I made meatloaf with mashed yams and steamed green beans. It was really good and filling! I definitely need to get back to cooking more often. I am glad I have leftovers for a few days now though. I can focus more on studying and organizing my life. This evening I need to take a bunch of anatomy quizzes since our school is updating this one client we use for classes and everything has to be completed this weekend. So once I take the quizzes and do the workshops I should be ok. It’s just finding the motivation to keep with it and finish up to I can relax a little bit later on. I can do it!!!

 

Homemade Bacon Pizza, Peach, Celery Sticks

Lunch today is a homemade turkey bacon pizza on a tortilla with a sliced peach and celery sticks. I woke up a little late so I snacked on a Luna bar while cleaning up my room. This lunch is just enough though! I will most likely be heading into anatomy lab sometime this afternoon to review the bodies. I am a little behind since I missed a lab and the review lab yesterday. I’m sure I’ll be fine since our practical isn’t until Friday but I just wanted to learn it early so I don’t have to cram later in the week since I also have a quiz on Wednesday and a test on Thursday. I am not super worried about any of them though. My last anatomy written exam is a week Monday though so that is what I am mostly concerned about. I am trying to be optimistic. Off to study!

 

Cobb Salad July 29, 2011

For a late lunch today I had a cobb salad at The White Dog Cafe. It was soooo good! The boyfriend and I went to dinner at their another more suburban location before and loved it so I thought I would take my family to the location in the city after graduation. It was a great choice and everyone really liked it! It was great showing my dad’s parents my apartment too since they haven’t been here to visit since I’ve moved out of town. It was just unbelievably hot out so that wasn’t fun. Overall though, it was a fabulous day with all of my favorite people in the this world :) Napppp time babyyyyy!

 

Bagel with Cream Cheese, Fresh Fruit

Today for breakfast I had a bagel with cream cheese and fresh pineapple, cantaulope, honeydew, raspberries, and blackberries. It was delicious! They had a big breakfast spread at our graduation since we all had to be there early for pictures with out respective classes. It was a long morning but it was good to see everyone and take lots of pictures. I am pretty tired from the dinner/dance and whole graduation day affair. I was planning to do some studying tonight but I think I am just going to head to bed early. My parents got my a sweet flat screen TV. I am sooo excited since I’ve been behind the times without one for so long. I definitely feel cooler now haha.

 

Salad, Chicken, Salmon, Asparagus, Rice

Last dinner for at my dinner/dance for school they served us this adorably displayed salad of argula, radicchio and romaine with shaved Parmesan cheese and white balsamic vinaigrette garnished with a tomato quarter up in a thin cucumber. The entree was brandy wine grilled boneless breast of chicken with rosemary, garlic, lemon, and dijon mustard topped with wild mushrooms, and pan-seared Atlantic salmon with sweet and sour glaze accompanied by black rice and sesame asparagus. For dessert, we have sponge cake layered with vanilla pudding, berry compote, whipped cream and a chocolate straw. It was all really good and so fun to enjoy with my friends!! Graduation day today, I need to get moving since my ride will be here in an hour and my hair is still dripping ahhh!

 

Spinach Garlic Pizza, Celery Sticks July 28, 2011

For lunch today I made my favorite spinach garlic pizza (except I’m out of feta boo!) on a tortilla with celery sticks. You must try this, it’s amazing! I went to school earlier today to witness the “Wheel of Pain” where our professor did an ab roller contest against 3 students. The one guy in our class beat him!!! It was awesome. I recorded the whole thing and am currently uploading it to Facebook to share with my class. Then we took a sweet class pic that we are going to get framed and give to our professor since he is leaving our school after our course is finished. Cool guy :) Tonight I have the dinner/dance at my school for all the graduating students, so it will be fun to get dressed up and hang with my friends and professors before graduation tomorrow. It’s always something going on with me!

 

Homemade Squid in Red Sauce July 27, 2011

Tonight for dinner I made a big pot of homemade squid in red sauce (my grandma’s recipe!!). I saw it in the store and was craving it so I needed to make it. But I did not notice until I got it home that the THREE POUNDS of it was not clean. That’s right, they came with heads, eyes, tentacles, skin, and insides! Well I spent close to 1.5 hours cleaning them before I could start the cooking. What a production! I planned to throw it on the stove quick while taking a break from listening to lecture, ha so much for that. I have to say it came out absolutely amazing!! I will definitely make it again, but next time I’ll go to the market and get already cleaned ones to save me some time. Ahh this reminds me of Christmas Eve. Ok, time to get back to listening to physiology lecture, then anatomy question time. Cya later :)
