Maple Brown Sugar Oatmeal, Clementine December 31, 2010

This morning for breakfast I am having maple brown sugar instant oatmeal topped with a clementine. The instructions say to make the oatmeal with water but I always make it with milk since I don’t drink it and I figure the a little extra calcium wouldn’t be a bad thing. I also like the slight bit of creaminess it adds! I actually prefer to make my oatmeal with nonfat plain yogurt, almond milk or water, and fresh fruit/nuts but that may be more of a summer berry thing. Well this morning I have to get my butt in gear and start packing my life up. I have so many presents to bring back I honestly don’t know if my car can handle it all. I will definitely be taking many trips back and forth from my 10th floor apartment. First thing’s first — time for a necessary bubble bath. I only have a shower at my apartment so I definitely enjoy the bath scene when I visit the parentals. I am thinking there will be a lot of traffic into the city this afternoon anyway on top of my friends driving to my apartment the same time as me, so I figure it’s best if I’m already showered (& get my mom to blow out my hair haha). Then meeting my cousin and her baby for lunch! Busy dayyyyyy. Happy New Year :) 2010 was a good year!


Chicken Caesar Sandwich, Broccoli Cheddar Soup, Apple December 30, 2010

Tonight for dinner I met three of my best friends from high school/college at Panera for dinner and I got my classic ‘pick two’ meal of half of a chicken caesar sandwich, broccoli cheddar soup, and an apple. It was wonderful as usual. I absolutely miss my friends and loved laughing hysterically throughout the entire meal. I really wish we got to hang out more. The two ladies that are local need to come visit me in Philly for a weekend because we just have way too much fun together. Obviously, the third pretty lady is always invited too! ;) Ok, time to be a loser now and probably head to bed early. I need to pack a little bit as well but I might put that off until tomorrow morning. Not sure where all this procrastination has come from, I need to get back on my game. Last night home.. bittersweet!


Caprese Salad

For lunch today my friend and I went to Wegman’s cafe and I got a caprese salad with spring mix lettuce, cherry tomatoes, fresh mozzarella balls, onions, pine nuts, and balsamic vinaigrette dressing. It was very delicious! Earlier we went to Border’s to do a little perusing and I got the book the Christian Atheist by Craig Groeschel. I have been intrigued by religion a lot the last couple months and I saw this book a few weeks ago and kept thinking about it. I decided today I would give it a try so hopefully it’s a good/challenging read. After lunch we had about an hour to kill so we went to the mall then we went to get shellac manicures. They are dried under a UV light after every coat and are not supposed chip and they should last longer than regular manicures. I like how it came out so we’ll see it holds up to it’s claim to fame. I got a nice holiday semi-shiny red — so fun!


Blueberry Greek Yogurt, Clementines

This morning for breakfast I am having Brown Cow blueberry Greek yogurt and two clementines. I am not a huge fan of blueberry yogurt but it is the only kind we have left so I will get it down. I really did not hold back this holiday season and desperately need to get back to my healthy eating habits. Too bad I have plans to meet friends for lunch AND dinner tonight. I am going to try really hard to make smart choices because my waistline and I are currently no longer friends. Why does metabolism have to slow down with age? :(


Frozen Chocolate Covered Banana with Coconut December 29, 2010

Tonight for a snack I am having a frozen chocolate covered banana with coconut. I made it this afternoon because I was craving one. My grandma used to make me these when I was younger and they are so good. I looked all over my house for popsicle sticks and came up short so I used cocktail stirrers and they are perfect haha. Such a delicious late night treat! Diet starts in the new year ;)


Spaghetti, Garlic Bread, Garden Salad

Tonight for dinner I made spaghetti with meat sauce, garlic bread, and a garden salad of romaine lettuce, carrots, and cherry tomatoes. It came out delicious! I ate dinner alone tonight since my parents are at yet another Christmas party and my brother is MIA. Hopefully something good is on TV tonight or I guess I will pop a DVD in. I really should be working on the powerpoint presentation I have to give on the 4th. Blah so much for that! Lunch and dinner date tomorrow so that should be fun! Niiight all :)


Mini French Toasts

Breakfast this morning I made mini french toasts. We have a french baguette leftover from a few days ago that is rock hard so I decided to make french toast with it and it came out awesome. I absolutely prefer french toast with freshly baked bread versus store bought. My grandpa just got here to visit recently and wants to take my brother and I out for donuts and coffee. Does he not see I’m making breakfast as we speak haha? He’s cute. I think he just gets bored during the day and wants something to do. He loves when we are home on break. I truly miss him being away. Ok, time to visit because he is over my shoulder lol. Adiossssss!
