Broiled Haddock, Baked Potato, Salad July 31, 2010

For dinner tonight I went out to eat with my parents. I ordered broil haddock, a baked potato, and a garden salad with balsamic vinaigrette dressing. I couldn’t finish it all, but it was delicious! Now I am finishing up packing and then heading to my friends for a little get together. She just got home from volunteering for a year so it will be great to see her and some other friends as well. I’m sure I won’t stay too late since I have to get up early to get on the road. Not to worry I will have internet while on vacation but I probably won’t be updating at each meal like usual. I will still try to take pictures of everything and update when I can. Next time you hear from me I’ll be relaxing in the sun :D


Homemade Pizza, Green Bell Pepper

Well we have like zero food left in our house since we are leaving for the beach tomorrow. So I decided to make a homemade pizza with my brother’s frozen homemade sauce and dough, and then we had some reduced fat shredded cheese in the frig. It obviously turned out amazing haha. I cut up a green bell pepper from my grandpa’s garden too. This afternoon I am planning to finish up packing and making a list of last minutes things I need to buy this evening. Then I am going to church with my parents and out for dinner (aka the no food in the house). I’ll check in again this evening!


Oatmeal with Kiwi & Almonds

This morning for breakfast I had high fiber cinnamon swirl instant oatmeal with a freshly sliced kiwi and some almonds. It was pretty good, although I definitely prefer my Kashi oatmeal. Now I am going to take a nice hot bath and then run some errands with my father. We rent a van for the beach so we have to pick that up and stop a few other places. Catch ya laterrr!


Grilled Chicken, Broccoli, Zucchini July 30, 2010

Tonight for dinner I had some grilled chicken on the grilled marinaded in speedy sauce, with steamed broccoli and my homemade zucchini pancake/muffin/????. We had a ton of zucchini that we need to finish this weekend so I shredded it along with some carrots and onion, and added a little garlic powder, salt, pepper, eggs, cheese, panko, and breadcrumbs. I cooked them in muffin pans so they were quick and easy. They actually came out pretty tasty! I have just been hanging out with my family tonight so it’s been fun. They are all crazy haha. I’ll probably head to bed in a few hours because I’m kind of tired already. Good night!


Turkey Sandwich, Carrots, Watermelon

Today’s lunch I am eating like normal again. I’m having a turkey sandwich on toasted light wheat bread and spinach, with sides of watermelon and baby carrots. It was a colorful and well balanced lunch! This morning I was able to get a little reading done and I am hoping it continues throughout the afternoon. It’s so gorgeous out today with a slight breeze so I might go out on my deck and study on the swing. Sounds blissful :)


Juicy Peach

This morning for breakfast I am just having a peach. I usually eat what I think I am supposed to eat, but this morning I am going to listen to my body. As I’m sure you can assume by my not posting last night’s dinner, I went way overboard at work. I basically ate everything in sight and it was gross. I’m so mad I did that because even this morning I am feeling the effects. My body is so used to eat healthy so even though I used to eat this way on a regular basis, now it affects me majorly. I will eat better today though for sure. I’m hoping to get a lot of studying in as well. And I’m off..


Grilled Chicken Panini July 29, 2010

I met an old friend out for lunch today and had this delicious grilled chicken panini. It was grilled chicken, homemade mozzarella cheese, lettuce & sliced tomatoes, drizzled with virgin olive oil & seasoning on a homemade roll. It doesn’t look like much but it was fabulous! I was really glad to meet up with my friend too, he is such an awesome person! Now I am making dinner quick and sticking it in the fridge so my mom will just have to pop it in the oven when she gets home from work. I am actually running down my grandparents shortly because my brand new cousin (and her mother) are coming by for me to meet her :) I cannot wait, I absolutely love babies! Then I will be heading to work at my ice cream shop job and hopefully my brother will bring me dinner once it cooks. Pray I don’t eat too much while there!
