Amy’s Vegetable Lasagna September 30, 2010

Tonight I have no time to make dinner so I just heated up Amy’s vegetable lasagna from my freezer. Wow this is soooo good! I actually bought it on a whim trying to have a somewhat healthy quick meal but I will definitely be buying this again. It has so much flavor and I don’t even mind that it’s loaded with veggies. Definitely give it a try! Today was another crazy long day of lab and class. To make a long story short I can head home tomorrow morning after all since I ended up using my 2 rats today because one had to be sacrificed early. I guess things work out how they are supposed to. I wanted to pack my car tonight but we are currently having torrential downpours so that will have to wait until the morning. Ok, off to finish my dinner, pack, and watch Grey’s/Private Practice. Home tomorrow!! :)

 

Garden Salad, Apple

Lunch today is a garden salad made of spring mix, half an avocado, baby carrots, celery, cucumber slices, and sunflower seeds. I also packed some dressing and a huge apple. I might be hungry after this so I am making sure to bring some snacks too! I am hopeful that my experiment will go as smoothly as yesterday’s did and maybe I’ll have time to run home before class. If not, it’s not the end of the world. I just wish it wasn’t raining out because it just makes me want to crawl back into bed. Sadly, I’m off to the lab!

 

Veryberry Greek Yogurt, Banana

Breakfast this morning is Chobani Champions Veryberry Greek yogurt with a banana. I really like this flavor, I think even more than the strawnana. Well today is another busy one surprise surprise. I have to do an experiment this morning and then CNA class again at night. Oh well, at least tomorrow I am heading home. Ok, off to pack lunch..

 

Turkey Rye Wrap, Baby Carrots, Peach September 29, 2010

For lunch today I packed a honey smoked turkey and (tons of) spring mix whole grain rye wrap, baby carrots, and a peach. My friend is coming into lab to help me out today. He is a med student now, but he did his Master’s in my lab on a similar project so he’s coming to lend a hand/give advice on my experiment. I’m so glad he’ll be here. I’m hoping because of it I might have time to swing home before CNA class. We shall see, I can never expect anything to happen because Murphy’s Law has been my good old friend lately. Alright, have a fabulous day!!

 

Waffles with Fresh Pineapple

This morning for breakfast I am having two Aunt Jemima low fat waffles with freshly cut pineapple. I am running around this morning as usual and had no time to cut my pineapple but I figured I never have time so I might as well just do it now. It was a good choice! It is perfectly sweet and juicy and goes well with the crunch of my waffles. So today is a super super looooooong day. I have lab 8am-4pm, CNA class 5pm-? (usually7/8ish), and then I am meeting a friend for dinner. Man I am going to pass out as soon as I get home! Ok, time to show you my lunch..

 

Chicken Marsala with Steamed Broccoli September 28, 2010

Tonight for dinner is the same as last night — chicken marsala with mushrooms and steamed broccoli. It totally hit the spot after a long day. Same plan again tomorrow too. I cannot wait to go home this weekend and relax a little. Oh so I was 8 minutes early to CNA class and I spotted an Autozone so I ran in quick got a diagnostic being my check engine light has been on since Sunday night. Well apparently my car has an evaporation system leak but the man said it’s nothing major and I can wait to drive home until the weekend for my dad to fix it. My dad says it’s ok except that it will cause me to burn gas faster which totally make sense being I got gas on Saturday and had to get it again today. So annoying! Oh well, ok time to shower and do homework/watch Teen Mom. Adios!

 

Turkey & Provolone Sandwich, Apple, Cucumber Slices

Lunch today I packed a honey smoked turkey and provolone sandwich on toasted whole wheat bread with spring mix. I also am bringing an apple and cucumber slices. I’ll have to remember to eat a little bit later than my usual time at noon since I won’t have time to eat dinner until I get out of CNA at 8/9pm. I will have to grab a few things to snack on too. Ok, hate to run but I wanted to be in the lab by 8:15am so I have to get moving. Have a fabulous day!!

 

Banana Bread Oatmeal with Bananas & Walnuts

This morning for breakfast I made a packet of Quaker instant banana bread oatmeal with a sliced banana I had in the freezer, almond milk, and walnuts. It was delicious! I will definitely buy this oatmeal again. I am rushing around like crazy trying to get ready and pack everything for the day since I have to go into lab early and set up being my Research Methods class is giving my experiment a late start. Then I have to go right to CNA class. Time to post lunch!

 

Chicken Marsala with Broccoli September 27, 2010

Tonight for dinner I am having left over chicken marsala with mushroom, and I added some steamed broccoli. I think broccoli makes everything better! It was really good. So my 2nd CNA test was easy thank God. Our class was just longer than usual because of it. Annoyingly the check engine light is on in my car and I have zero time to take it to Autozone for a diagnostic so I’m hoping it will be fine until I head home on Friday and my dad can check it out. Tomorrow is a full lab lab day. I have to head in around 8am to set up, then I have Research Methods from 9-11am, and need to start my experiment right at 11am so I can finish in time to get to my CNA class for 5pm. I’ll be glad when my life slows down a little, but at least it isn’t too difficult. Ok, well now I am going to watch Quints by Surprise and get my CNA homework done for tomorrow. Sleep well!

 

Garden Salad with Tuna

Lunch today I am having a garden salad made with spring mix, carrots, cucumbers, celery, sunflower seeds, tuna, and balsamic dressing. I have so many cans of tuna I need to start using them. I went through this tuna phase and then got out of it pretty quick. I still like it, I’m just not obsessed. Anyway, I need to keep eating it. So I was able to catch up on all my shows this morning and study a little bit. I definitely need to review more this afternoon since I’m not sure I retained too much. Hopefully tonight’s test will be as easy as the first one. Wish me luck!
