I am totally a dessert person! So I don’t eat horribly fatty and sugary desserts I decided to buy Skinny Cow Mint Ice Cream Sandwiches. Well they are unreal. I absolutely love mint chocolate chip ice cream so this was just perfect! I’m glad I have 5 more :) I hope my family doesn’t eat them because I plan to have one the next 5 days ha! I’m kidding, I will share, one.. maybe! Oh and I did have a great walk with my mom. I kind of love her more than anyone in the world <3
Tonight’s dinner was awesome! I marinated chicken in a teriyaki marinade and cooked it on the grilled (best!). Then I made butternut squash french fries with a little salt, garlic powder, and nonstick cooking spray — phenomenal! I can’t remember the last time I had butternut squash but it was my first time having it as fries, I will definitely do it again. I had some fresh picked green beans too :) I was extremely happy with how this meal turned out. I am planning to study a little more tonight and hopefully go for a walk around my neighborhood again with my mom. I missed being home!
Well I ran my errands this morning and I bought a bunch of foods too! For lunch I had a Boca Vegan Burger with some lettuce and ketchup. Then I bought this amazing huge bag of frozen fruit (Great Value from Walmart) with pineapple, mango, strawberries, and peaches, and vanilla whey protein — so I couldn’t wait for breakfast tomorrow to make a smoothie haha. Well, results are in! It was the BEST smoothie I ever made — ever!! I loved it. Here’s the eats: 1/2 of original almond milk, 1/4 cup plain nonfat yogurt, 1 cup frozen fruit, and 1/2 scoop of vanilla whey protein. OMG try it if you can — sooo yummy! My picture does not do it justice at all. I think I might need to find a new place to photograph my meals at home because my kitchen does not have great natural light depending on what side of our house the sun is on. I’m sooo excited to have to discovered this smoothie. Get ready to see it many days in the future! Ok, off to shower and study :)
First breakfast at home in a while! I am having a Light & Fit Strawberry Cheesecake yogurt, 1/3 cup of Honey Bunches of Oats cereal to throw in it, and some fresh cut cantaloupe. I haven’t bought Light & Fit yogurt and I couldn’t tell you how long, but this flavor is delicious. I almost feel like I’m eating a dessert! I always see those Yoplait commercials too for all those “dessert-like” flavors. Maybe they are worth checking out after all! Has anyone tried them?
This morning I need to run to the bank and the post office, and I have to get a few things at Walmart as well. I will probably pick up a little food too. My parents always have lots of fresh fruits and veggies, but they have all these fabulous dessert foods too and well, sometimes I find it hard saying no. I figure if I have things I am used to eating at hand then I will be more inclined to reach for them — or so is my plan ;) Then this afternoon will be devoted to studying! Maybe even a little after dinner tonight too! Ohhh I should mention my mom and I went for a walk around my (hill filled) neighborhood last night and it felt great. I am hoping we can go every night I’m home!

Lentil Soup & Broccoli June 29, 2010
I am home! Yayyy! It feels good to be back. My grandparents came to see me too. They are so cute! Sooo for dinner I had some homemade lentil soup and steamed broccoli with grated cheese. My mom had to go and make blueberry muffins with fresh blueberries and they smell so delicious. I am going to try not to have one but I might give in ha! I normally would have one but after my splurge last night I’m choosing not to. I plan to just hang with the fam and then head to bed early. Happy Tuesday!
Lunch today is an oven roasted turkey sandwich on a Trader Joe’s Apocryphal Whole Wheat Pita with piece of Land O’Lake Snack ‘N Cheese To Go – Colby Jack, 4 strawberries, and half of a cucumber. I really need to make sure I stay on track today because I am somewhat depressed after last night. Ok, time to get ready and head to the lab! Once I get back it will be packing, eating dinner, and getting on the road! Lataaaaaa!
Well let me start off by saying you do not even want to know all the horrible foods I ate last night. I am so disappointed in myself and don’t know why I did it because I wasn’t even hungry. Even this morning my body feels gross. Needless to say that cannot happen again. I need to start buying healthier options for dessert because I tend to not buy anything and then when I have cravings I just raid my cupboards. I will add that to my grocery list when I return from being home.. which I am also nervous about because I tend to overeat there as well. Cross your fingers for me these next few days I am able to get back on and stay on track. This morning I am having green smoothie #2 which is similar to the first one I made, only not green and fairly thick. It is a 1/2 cup of baby spinach, 1 frozen medium banana, 3 frozen strawberries, 1/2 cup of almond milk, and 1/2 scoop of chocolate whey protein. Very refreshing! Ok, off to pack up lunch for school today..
