Homemade Pizza, Green Bell Pepper August 31, 2010

Tonight for dinner I was craving pizza. I was thinking about ordering out but I knew I had tons of cheese and leftover pizza sauce in my freezer. The only thing I didn’t have was yeast for the dough. So I decided to use Bisquick and just added a little water and a little flour. It turned out pretty well granted the crust is how you would expect. It is kind of soft like a biscuit but goes well with the cheese, sauce, and Italian seasoning on top of it. I loved it! Oh and I cut up one of my grandpa’s green bell peppers too. I was especially hungry since I didn’t eat a real lunch today. I just picked all late morning and early afternoon. I hate when I do that but I figure it’s allowed at least once a month ;) Two of my TV shows are on tonight so I am excited about that, otherwise I will probably just hang out and not study — and I am totally ok with that!!

 

Egg Substitute, Toast with Pear Butter, Strawberries

For breakfast today I made 1/2 cup of egg substitute, a slice of whole wheat toast with my homemade pear butter, and some freshly sliced strawberries. So good!  When my parents came to visit on Sunday I sent them home with jars of my homemade pear butter (after letting them try it here, which they both loved btw) and asked them to bring one to my grandparents. I wanted them to have some since the pears were from their tree. Hopefully they will like it! So I have to be at school today for 11am to check out some new machine that is coming in for our lab. My professor wants everyone to learn how to properly use it. I’m not even sure what it is for since I won’t really be using it, but I think it involves something regarding how to break up kidney stones in rat models. I figure it will be interesting regardless! Then I have class today from1-3pm and might be going to a spinning class with my friend at her gym tonight if she remembers she asked me last week haha. Hasta almuerozo!

 

Shrimp Scampi with Broccoli August 30, 2010

Tonight for dinner I made shrimp scampi with broccoli and brown rice. It was quite luscious! Clearly I didn’t study today as I’m sort of over that, although I know I need to at some. I did get a lot of my research done and only have to mail out one more thing tomorrow morning to be set for a while, then it waiting on other people. I’m almost nervous to say that everything is working out just as planned. Hopefully things will continue to go smoothly. I will probably continue to research things tonight and watch some TV. School tomorrow!

 

Tomato, Basil, Cheese Wrap, Fresh Pineapple

Today for lunch I made my tomato, basil, cheese (ricotta+mozzarella) wrap like I did last week. Only this time we were out of fresh basil so I used dried. It still did the trick. I still burnt the wrap a little bit, but not as much as last time. I’m getting better haha. I just can’t stand around and stare at the oven, and then I get preoccupied so it gets a little dark in the meantime. Oh well, good thing I’m not picky. I had some fresh pineapple too which was super sweet and utterly delicious. So this morning went very well. I got everything done I needed to and am further on my way to finishing this application process. I need to make a bunch of phone calls to prospective schools this afternoon to confirm some things but things are going well. I hope that is a good sign that this career change is the right thing to do. I’m not posting what exactly it is yet because I’m not sure who reads this and there are a few people I want to talk to in person first. I am super happy about it though! Ok, time to make phones, write emails, and research schools!

 

Sour Cream Pancakes with Fresh Berries

For breakfast this morning I had my last two homemade sour cream pancakes I had in my freezer topped with fresh blueberries and strawberries. They were almost as good as when they were freshly made. I have a few errands to do today before I do some studying, since today I will be studying. I have to pay my rent, print out some things in the library, go to the Bursar’s office to request my transcripts, meet with my professor, mail out some forms, and I think that’s it. By the time I shower and get ready that should take me until about lunch so I’ll see you again then :)

 

Garden Salad August 29, 2010

As I said before I am having a light dinner. I made a garden salad with butter lettuce, carrots, cucumbers, celery, feta cheese, and a tomato from my parent’s garden with balsamic vinaigrette dressing. It was surprisingly filling, but I did eat a ton this afternoon so it is somewhat expected. My parents brought me so much food! Tons and tons of pears again (ughh I’m kind of sick of them and am planning to give some away), green peppers, tomatoes, and radicchio lettuce. Since I bought butter lettuce and spinach the other day I knew I had to have a salad tonight being now I have a 3rd kind of lettuce! Now I am watching The Time Traveler’s Wife and just relaxing for the rest of the evening. Toodles!

 

Roast Beef, Provolone, Rabe Sandwich, Carrots, Plum

Well today for lunch my parents and I went to Reading Terminal Market. It is this old train station that has tons of food stands with every cuisine you can think of, bakeries, fresh meat/fish, fruits, veggies, flowers, plants, ice cream, candy — it has it all. It is really well known too! My dad has been dying to go and try this sandwich he saw on the Food Network. So we stood in line forever and got them. He got pork, and my mom and I split a roast beef one because they were huge. We got ours with sharp provolone and rabes. It was hands down one of the best, if not the best, sandwich I have ever had in my life. It is so dangerous being so close to me, I might have to have it on a regular basis. Man, it was truly divine! I brought some baby carrots and a plum for good measure. Although, I killed it later on when I had homemade ice cream (also shown on the Food Network). I got a cup of banana and pumpkin mMmMm. And to make matters worse I had a cannoli (Food Network bakery once again) too! I know I said I wasn’t going to have any more sweets today after my breakfast, but I could not resist. I am going to have a super light dinner though not to worry. We walked all around the city today and it was about 1,000 degrees but I’m glad I we did walk since I ate so much food for lunch. We also went to see the Liberty Bell, Independence Hall, and Betsy Ross’s House. It was very interesting! I had a great day and I am glad to have spent it with my dear parentals :)

 

Raspberries & Cream

This morning for breakfast I woke up craving something sweet. The other day I made a dip to snack on throughout the day with my fresh fruit and today I just wanted it more than usual. I made it using fat free cream cheese, nonfat plain yogurt, stevia, and vanilla extract. Clearly with the cream cheese it is not a super healthy option but it totally does the trick. I also snacked on a brownie (with icing!) my roommate brought me last night while she thought I was “studying” haha. It was on a note that said “study break :)”. She is too cute! I saved it until this morning since I had just brushed my teeth then. It was super yummy, and made with applesauce instead of oil! Sooo my parents are coming in a few hours. I have to shower and straighten up but I can’t wait to see them. We are planning to go into the city so lunch and possibly dinner will be eaten out today. No more sweet things though after my sugar high breakfast! I heart Funday Sunday!!

 

Swiss Steak with Peas August 28, 2010

Tonight for dinner I am having my leftovers from Thursday night — swiss steak with peas. I still love it! I was able to get some studying done this afternoon, but chemistry literally takes me so long because I have to keep going over problems again and again to make sure I understand them. It is tedious and I am not a fan being barely any careers in health care require actual chemistry. I will probably attempt to study a little more tonight but we’ll see how it goes. I kind of am tired already so I don’t know how long I will last. I am excited about my parents coming tomorrow though, I cannot wait to see and hang out with them! Should be fun :)

 

Miso Soup, Green Bell Pepper, Pear

Well now that my parents are definitely coming to visit tomorrow they informed me they will be bringing tons of pears and veggies from my grandpa’s garden — of course the day after I go grocery shopping they tell me this! Needless to say I am having a green pepper and pear now since I will be flooded with them tomorrow. I am having my miso soup from last night’s sushi fest too. It is a nice and light lunch! So I spent this morning cleaning like I said I would, kitchen floors and all, and then writing my new personal statement. I am surprisingly happy with my first draft so that is a good sign, although I’m sure I will change it once I have some people proof read it. This afternoon I am definitely studying for the DAT. I know I keep saying I’m going to, but my heart really isn’t in it anymore, and I’m not sure it has been in a while. Oh well, I’m still taking the test so I should try to do as well as I can anyway.
