Fiber One Chocolate Fudge Brownie March 26, 2011

I had the most amazing snack ever tonight, for only 90 calories too! It was a Fiber One chocolate fudge brownie. When I got to babysitting the mom said the kids could have them for dessert and she asked if I ever tried one. I said no. So she insisted I have one too. I have to say I wasn’t expecting much for 90 calories but it seriously blew me away. It is chewy like a brownie and chocolaty and has chocolate chips throughout it. If you see a box of these on the shelf you definitely won’t regret buying it — that is unless you eat the entire box in one day ;)

 

Frozen Chocolate Covered Banana with Coconut December 29, 2010

Tonight for a snack I am having a frozen chocolate covered banana with coconut. I made it this afternoon because I was craving one. My grandma used to make me these when I was younger and they are so good. I looked all over my house for popsicle sticks and came up short so I used cocktail stirrers and they are perfect haha. Such a delicious late night treat! Diet starts in the new year ;)

 

Honey Crisp Apple with Chocolate Hazelnut Butter October 24, 2010

Well today I ate all out of wack so I didn’t really take any pictures. I figured I have to blog about something today so here is my late night snack — a delicious and seasonal honey crisp apple with Justin’s chocolate hazelnut butter. It was scrumptious! I just got back from volunteering at the ER and I saw some pretty interesting things. Otherwise I just spent my day working on my proposal which is coming along much slower than I anticipated. Oh well, back in the lab in the morning. Toodles!

 

Mandarin Orange Jello Dessert September 10, 2010

Tonight for dessert I made a recipe my mom has been making for years. It is super simple with four ingredients — a packet of orange jello, 8 ounces of Cool Whip, 16 ounces of cottage cheese, and a large can of mandarin oranges. Let the Cool Whip sit out at room temperature so it’s easy to work with and be sure to drain the juice from the mandarin oranges. If you are serving this, save a few oranges to display on top. Mix all ingredients together and refrigerate until ready to eat. It is so light and airy! I’m super glad I thought of this tonight because I was seriously considering making cheesecake, and well this is a much healthier option. Almost just as good too :)

 

Apple with Chocolate Hazelnut Butter September 9, 2010

Tonight I had a fun snack so I decided to blog about it. I finally tried Justin’s chocolate hazelnut butter and wow it is soooo good! I only bought the little packets they sell but I am definitely thinking about investing in a whole jar.. so great! I put some on a locally grown McIntosh apple too — my favorite apple ever! It was a great snack after my chaotic day. Have a great night, tomorrow is Friday!

 

Banana Soft Serve with Dark Chocolate Chips July 25, 2010

My little snack this evening is some classic banana soft serve “ice cream”. Since I have a particular sweet tooth today I decided to add some Hershey’s special dark chocolate chips to my banana bonanza. These are heavenly! I’m not quite sure what stopped me from eating the entire bag. I love that they gave my ice cream some crunch though, it was a nice twist. Have a wonderful evening all!

 

Black Bean Brownie with Mangos July 23, 2010

Tonight I am having one of my decadent and delightful black bean brownies with a freshly sliced mango. Ahhh to die for! I think I enjoyed this a little more tonight too since I didn’t have one last night. I am totally a dessert person. I really could never give them up completely because I would just binge like crazy, but in moderation — totally allowed. Ok, so I am reviewing some flashcards and watching TV. I know I should just be studying but well, you know the deal. See you in the a.m.!

 

Black Bean Brownie with Blackberries July 21, 2010

Tonight I am having another one of my black bean brownies with some fresh blackberries. I have been waiting for this baby all day ;) I am glad I can actually be satisfied with one as well. So tasty! I am going to try to read another chapter tonight and maybe do some online quizzes since the reading really tires me out/bores me. I just finished making dinner for tomorrow night since I have to babysit all day and will get home and be famished. I am always so tired and hate having to cook after a long day running around after the kids so I’m glad I remembered to make something. I actually will end up having it for 4 meals because the recipe made a lot — one of my favorite meals my mom makes. Check it out manana! Ok well have a good night ya’ll :)

P.S. A week today I am getting my hair chopped off (at least 10 inches) for Locks of Love ahhhh!!

 

Black Bean Brownies! July 20, 2010

Well basically all day I have been craving something sweet and I don’t have many sweet things in my apartment at all. I knew if I went to buy something I would go overboard so I decided to make a recipe I have always been intrigued by — black bean brownies! I made a recipe posted on Stylish Cuisine and she said her four little boys loved them so I figured if kids liked them I would too. They are actually really good! They don’t taste exactly like traditional brownies and have more of a fudge-like texture but they have great flavor. And they definitely don’t taste like beans! I am hoping I can only eat one in a sitting.  Based on my recipe (with a few lower calorie substitutions) each brownie is a little over 100 calories. Not too bad! Off to freeze half of them so I don’t go crazy ;P

Banana Soft Serve Ice Cream July 13, 2010

So I decided to make some of the famous banana soft serve ice cream that was originally made famous by Gena from Choosing Raw. I tried a roasted banana version of it once before that was posted by Lauren from Healthy Food for Living. I liked the roasted version a lot so I figured I would try out the original and see how it compared. Because I don’t have a real food processor, yet again I did not make the original of just frozen banana chunks. I only have a mini chopper so that would have to suffice. Because the bananas were so frozen/hard they would barely chop up so I added a little almond milk. Then because it tasted slightly nutty I added a dash of vanilla extract. Yumm! I really like this a lot! Man everything with bananas is just so gosh darn good :) I asked for a blender/food processor combo for my birthday so I cannot wait to get it and actually try the real original recipe ha. Until then my experimenting is working pretty well :P
