Buffalo Chicken Pizza, Celery Sticks September 29, 2011

Tonight for dinner I made buffalo chicken pizza with celery sticks. I am still trying to use up the rest of my rotisserie chicken so here it is in use again. I love hot sauce yummm! I can finally relax a little after my week. Tomorrow I only have class 1-3pm which is awesome. Then I am heading to the boy’s to hit the road for home. I still have to pack for home too boo. I hate packing! I have a huge bag of laundry too so I’m sure my mom will love that haha. I am excited to see the fam and have a home cooked meal tomorrow that I don’t have to make :) Then annual family bonfire Saturday night yayyy! Grey’s & Private Practice tonight too, things are looking up!!

 

Chicken Salad Sandwich, Celery Sticks, Apple

Lunch today is a chicken salad sandwich on a toasted TJ’s british whole wheat muffin with celery sticks and an apple. I used the rotisserie chicken for this too. I want to use up all my food before I head home tomorrow. This worked out great too! So today I kind of hate that I have until 5pm, but I guess only having it for 2 hours tomorrow makes up for it. Then I am heading home right afterwards. I still need to pack all the clothes I want to bring home, my laundry, and things to leave there. I also have to bring back all my fall/winter clothes and boots. Maybe that will convince the weather to cool down since a 10th floor apartment, no AC, and muggy weather do not mix well. Ok well happy Thursday!

 

Pineapple Greek Yogurt, Fiber One Cereal

This morning for breakfast I am having a Chobani pineapple Greek yogurt with Fiber One cereal. I finally got all of my work done last night. Now I can breathe a little this week. Today is my last quiz and then tomorrow I only have class 1-3pm and I am heading home for the weekend. I can’t wait to go home and see my family. I just found out my little cousin is having a baby boy yesterday too so it will be fun to celebrate that and his arrival at the beginning of 2012. I am so glad I don’t start today until 10:30am. It’s nice not getting up while it’s dark out for a change. I just got an email that next week the schedule changed and now I have lab 7am-10am. Ughh how horrible!! I really feel bad for the people who commute over an hour too. Poor planning!

 

Rotissiere Chicken, Broccoli with Cheese Sauce September 28, 2011

Dinner tonight is rotisserie chicken with broccoli with cheese sauce. I love rotisserie chicken, I definitely need to buy them more often. I think I am going to use this chicken for lunch tomorrow as well. I might pack my lunch tonight so I am ready to go in the morning. I always feel so rushed in the morning. I am so glad tomorrow is my last quiz of the week thank God! It was such a crazy week once again. Next week I have a quiz Monday and a test Tuesday so I don’t know how I am going to manage to find time to study while I am home this weekend especially since the boy is coming with and I have to semi-entertain. Blahhhh sometimes school is so annoying. And this muggy weather is going to be the death of me! My eczema is sooo bad lately. I’m in the shower more than I’m out. Ughh please cool down Mother Nature. Alright enjoy your evening everyone!

 

Pomegranate Greek Yogurt, Dried Prunes

This morning for breakfast is Chobani pomegranate Greek yogurt with dried prunes. I am completely lacking in the fresh fruit department so this is what I’m having for today. I don’t really want to buy anything new since I am going home for the weekend on Friday. I think I will manage though, I actually really like prunes. So at school this morning I have class 8-10am then a quiz at 10am and my SP at 11am. Basically that means I will be done for the day at noon which is awesome, but I am still super nervous for my quiz and patient since I have to add the cardio exam and only practiced it once. My lab partner said if we have time between the quiz and my SP she will go over it with me so that would be helpful. 12 o’clock?

 

Oreo Stuffed Chocolate Chip Cookies September 27, 2011

For my school bake sale I made Oreo Stuffed Chocolate Chip Cookies. I made these because I thought they would be quick but of course I tried to use store bought cookie dough and that was a failure. The original recipe is necessary for the cookie dough so they don’t spread too far on the tray. I’m sure they will be awesome though. I saved a few for a boy, but they did make a perfect 2 dozen as the recipe states. It is sooo hot in my apartment I don’t even have the desire to try one which is so unlike me. I have 8 cookies from my first batch in the freezer so I am pick at those in the future if I want.

 

Rotissere Chicken, Broccoli with Cheese Sauce

Tonight for dinner is rotissere chicken and broccoli with cheese sauce. I picked these up on my way home so dinner would be quick and easy. Well so much for that being my day. I also made oreo stuffed chocolate chip cookies for my PA program’s bake sale tomorrow and decided to buy the big tub of Toll House cookie dough so I didn’t have to waste time making it from scratch to save time. I have 1o1 things to do tonight for school tomorrow. Well don’t worry the first batch of my cookies turned out like sombreros with the cookie melting down onto the sides like a pancake, although the oreo in the middle was still covered. So then I followed the original recipe and they came out great. Hopefully they go over well tomorrow!

 

Fiber One Cereal, Apple

This morning for breakfast I had some Fiber One cereal with an apple. I really probably should go grocery shopping this week but I am heading home for the weekend on Friday so I really want to try and avoid it. I think I should be able to manage. I do need to run to the store today anyway I think because my class is having a bake sale tomorrow and I need to bake for it since I didn’t for the last one. I have no idea what I am going to make yet but I kind of want to make something fun. We’ll see if I have the time/energy with trying to study for my quiz tomorrow and whatnot. I also have a quiz this afternoon too but I think I will review that during lunch since it’s on homelessness and shouldn’t be too too bad.

 

Filet Mignon, Steamed Broccoli, Brown Rice with Carrots

Last night for dinner I had filet mignon, steamed broccoli, and brown rice with carrots. It was delicious! I really love those little steaks, especially with the delicious seasoning they come with. I think I might need to order some from Kansas City steaks. Such a good deal! I spent pretty much all of my night studying and working on my SP write up from last week. I also read some of my PA profession chapters since I had to get a jump start on reading tonight. I still have like 80 more pages tonight to read ugh. Oh well, hopefully it won’t be as bad as I anticipate. I also watched Boardwalk Empire last night. It was soooo good and I am really pumped about the new season. Yayyy love it!

 

Ham Sandwich, Cucumber Slices, Apples September 26, 2011

Lunch today is a honey ham sandwich on a toasted multigrain english muffin with cucumber slices and an apple. I really hope this is all I eat while at school. We are having a surprise baby shower for a girl in our class at 3pm and people are bringing food so that can be dangerous. I guess this will be my test to see how I serious I am about becoming happy with myself again. On a school note, I have my 1st H&P test at 8am. This is my crazy 12 credit class so I am super nervous about it and definitely have anxiety. I wish I just had a little free time so my mind could relax but looks like that isn’t going to happen for a very long time. At least I can control my diet if I want to — and oh I do! I am going to preach healthy living for the rest of my life as a PA so it’s extremely important I lead by example. Off to school!
