Chicken Marsala, Green Beans, Yams March 8, 2011

Tonight for dinner I am having the last of my leftovers — chicken marsala, steamed green beans, and baked yams. I just love marsala sauce and mushrooms! I must say that after eating my oatmeal this morning I was fuller longer than usual. I will definitely have to make that again. Although, I promised myself I will not open another jar of almond butter for a little while since I basically can’t control myself. Yes, I ate the last one in 5 days ahhh! In lab today my drug still did not arrive so I had to make slides. It most likely won’t be here until next week so it looks like I will be making slides on Thursday as well. Not a huge deal though since I’m hoping I can be proactive and finish cutting all of my slides then so I can beginning staining next week. Then after that it’s full time thesis writing yayyyy (or nayyy?)! Not sure exactly the plans for tonight so I’m just playing it by ear. Adios!

 

Turkey Sandwich, Veggies, Cereal

This afternoon for lunch I packed an oven roasted turkey and spring mix sandwich on toasted whole wheat bread with cucumber slices, celery sticks, and some Fiber One. I always wish I had something to crunch on so I figured the cereal would be a good addition. Today I am hopeful I will be able to do an experiment although I really have no idea if my drug arrived, if it did arrive if it’s madeĀ  up, or if we have enough drug to put all of the animals asleep (because our order was also behind for this!). Otherwise, I still have class at noon and there are always slides to be made. I’m off, have a wonderful day!

 

Overnight Oats in a Jar

This morning for breakfast I am having overnight oats in a jar for the first time. I made these with quick oats since I didn’t have rolled so they maybe actually be slightly different. Last night, to my almost empty almond butter jar, I added quick oats, low fat milk, water, truvia, flax seed, and chia seeds. Then this this morning I popped it in the microwave to warm it up a little and wow. This is soooo good and it really grew in volume even though though I used the quick oats. I am definitely now intrigued to see how it compares to the rolled oats so I added them to my list. I will be going into lab within the hour so I still need to figure out something to pack for lunch, although I am beyond full already from this breakfast so I think I will just bring something light.
