Blissful Hope

A Grad Student's Journey Toward Healthy Eating

Mushroom Tortellini, Pear March 21, 2011

Filed under: Dinner — Maria @ 4:12 pm

Tonight for dinner I packed a Lean Cuisine mushroom tortellini meal and a pear. The meal is described as “Portobello mushroom and cheese stuffed tortelloni with snap peas, sun-dried tomatoes, peas and red peppers in a creamy mushroom sauce” so hopefully it will be as good as it sounds. Wishful thinking I’m sure ha. So I am babysitting tonight at 5pm for the little 3-year-old girl I watch. She is always really good so it will be an easy night. I had a good day in lab, but I am a little bummed because my tuition for PA school was just listed and it’s a lot more than I thought. I has assumed all graduate programs at my school would be the same, but the PA program is $10K more than the rest. I was planning not to take out a Grad Plus loan this coming year, but now it looks like I might have to take out one after all. I need to chat with the rents about it — kind of depressing. Ok, babysitting time!

Turkey Sandwich, Strawberries, Green Bell Pepper

Filed under: Lunch — Maria @ 8:39 am

For lunch today I packed an oven roasted turkey sandwich on toasted whole wheat bread with three HUGE strawberries, and half of a green bell pepper. My food is starting to deplete a bit so I will definitely need to head to the store sooner than later. I really hope my experiment goes well today. I have quite a few more to do and I still need to write my thesis so the better the experiments come out the less I will have to do. I really need to get writing, especially because the DC conference is in less than 3 weeks and I still need to make a powerpoint and write a speech for that ughhh. I am going to be beyond nervous. Ahhh ok I have to go to school. Babysitting tonight at 5pm! Catch ya later ;P

Egg, Cheese, & Turkey Bacon Sandwich, Red Grapes

Filed under: Breakfast — Maria @ 8:28 am

Today for breakfast I am having an egg white, swiss cheese, and turkey bacon sandwich on a toasted TJ’s British muffin with red grapes. This is the most delicious sandwich ever. Laughing Cow totally makes everything better. Well this morning I am heading into lab to do an experiment and probably some work study. It is nasty and raining out. I talked to my brother earlier and he said it’s snowing at home and the school he teaches at is closed, so I guess I will take the rain. Ok, time to pack up lunch quick I’m running a little late today..
