Salmon Potato Cakes Over Spring Mix Greens

Today for lunch I made salmon potato cakes over spring mix green and topped it with balsamic vinaigrette. I really love this dish and am having it for lunch today since spring mix lettuce barely lasts a few days when I buy it without getting slimy. It is sooo delicious I can’t wait to have it again (possibly tomorrow!). Well today on my way grocery shopping I heard this horrible noise when I accelerated so after I brought my food home I took it to Firestone to get it checked out and apparently it needs a new muffler and pipe to the muffler womp womp. Hopefully, that is all it needs! Since they said it would take a few hours I walked the 3 mile trek home. Luckily, I thought ahead and wore my Uggs, a long coat, scarf, hat, and gloves just in case it would take a while. It was a freezinggggg cold walk home, but it felt good. Hopefully one of my roomies can take me to pick it up, otherwise I’ll be venturing into the cold again!
