A Grad Student's Journey Toward Healthy Eating

Manicotti, Ham, Yams, Asparagus, Artichoke April 9, 2012

Last night for Easter dinner we had homemade manicotti, spiral ham, yams, asparagus, and artichokes. I also had lots of appetizers, bread, and a salad. What a meal! Everything was delicious and of course I ate too much. And I got an amazing Easter basket from my parents and another from my grandma so I literally have about 10lbs of candy staring at me which is definitely bittersweet ha. It was so good to be home and see my entire family. I even got to see my tiny baby cousin Carter last night. He is sooo precious and growing really fast. I cannot believe he is almost 2 months old — I’m so in love! I actually didn’t get back to Philly last evening until after 11pm since I stayed longer to see him. He has lots of family to visit on holidays and we were the last stop. I am glad I waited, although I need a nap today because of it ha. I still need to unpack my car after class too. Back to grind!
