A Grad Student's Journey Toward Healthy Eating

Pasta Fagioli, Sliced Green Bell Pepper March 22, 2012

Filed under: Lunch — Maria @ 7:09 am

Today for lunch I packed a bowl of homemade pasta fagioli and a sliced green bell pepper. I couldn’t handle another boring ham sandwich so I was glad I had this guy stowed away in the freezer. It will be delicious and is super easy to pack. I actually don’t even have to refrigerate it at school since it is still pretty frozen from when I attempted to defrost it in the frig overnight. I do have my cardiology exam review at noon so I will probably eat in the classroom and just run to the lounge to heat up my soup. Apparently today is national water day sooo make sure you drink up! I know I will be! My school installed these awesome water bottle filter fillers above every water fountain in the school. So we can all refill our reusable water bottles with pure filtered water and there is even a digital counter next to it so every time someone uses it, it adds one more to the “number of plastic bottles being saved” or something — so cool! Get your aqua :D
