Today for lunch I am having two slices of pizza — mushroom and spinach riccota with a side of baby carrots. I didn’t have enough ricotta left to make an entire pizza with it so I decided to go half and half and I’m so glad I did. I love mixing up the different flavors and they both came out great! I have this whole plan to not go grocery shopping again until March 11th but I am nervous if it is going to happen so I feel like I constantly use fresh ingredients meaning they are constantly getting depleted. I’m sure I can make it work but I’m not into eating lots of canned/processed foods on a regular basis so we’ll see how long it lasts. I am really going to try though! So my pharm quiz went well this morning now I really need to focus on reading my EKG book. The more class I sit in the more I realize I need to read outside of class and there is no time like the present!
