Lasagna Cups, Green Bell Pepper January 21, 2012

Tonight for dinner I made lasagna cups with a sliced green bell pepper. I was inspired by Hungry Girl to make these cups although clear I took them out of the cups way too soon and they fell all over ha. HG uses ground turkey as well as ricotta/mozzarella but I am keeping them meat free since I didn’t have any on hand. Maybe next time I will give it a try or try some meatless crumbles which I bet would be good. These came out great! I am really going to buy wonton wrappers much more often. I think they are very versatile and that excites me especially because they are a lot less in calories than pasta and don’t really taste that different. Well this afternoon I just hung in with the boy and watched Definitely, Maybe (he only slept through a little of it ha) and now it’s dinner time. He’s having sausage and peppers but I’m not a fan so I made these guys. I think they are much better ha. Yayy for a snowy Saturday in :D
