Acorn Squash Ravioli in Brown Butter Sage Sauce, Steamed Broccoli January 20, 2012

Tonight for dinner I made acorn squash ravioli in a brown butter sage sauce with a side of steamed broccoli. This is my first time ever buying an acorn squash and it is very easy to work with A few weeks ago when I was out to dinner I had this fabulous butternut squash ravioli/brown butter sage sauce dish and I wanted to attempt to replicate it, so I figured I would try it with my acorn squash on hand. I just roasted it with salt, pepper, garlic powder, and canola oil spray then tossed in it my food processor with two wedges of LC light swiss, onion flakes, nutmeg, and a splash of milk. Then I sealed the mixture in wonton wrapper — so Sandra Lee of me I know ha. For the sauce I just added a little butter to a pan with some fresh sage and sauteed the ravioli (after I boiled them) in it and wowww I’m in love. I will definitely make these again! I’ll probably give butternut squash a try next time! :D
