For dinner tonight I had some homemade meatballs and sauce (thanks grandma!) and a stuffed artichoke. This was my first time ever eating/making an artichoke. I’ve had it before only in dip form. I stuffed with it Italian bread crumbs, garlic powder, onion flakes, salt, pepper, and egg substitute, then steamed it for about 20 minutes. Unfortunately, it was kind of a failure. I swear I followed everything right and even youtubed how to eat it, but it was sooo odd. Like I didn’t understand which part I was eating, it didn’t come off the leaf smoothly, and I couldn’t really find the heart. Ahhh so sad. I think I will have to watch my grandma make them and then try again. Well tomorrow I am heading to Six Flags with the boy bright and early. I’m not sure who’s more excited — him or me. He might actually win, which is shocking to me. I cannot wait to see my bff from college either and meet her man. Should be an awesome day!
