Tonight for dinner I am making a my own version of a tacquito. They are so bad for you so I am making an attempt at my own. I broke up a vegan burger and added taco seasoning, then put it in a tortilla with a light swiss wedge and shredded mozzarella/cheddar cheese. I sprayed it with nonstick cooking spray and baked it in the oven. It was pretty good! I also made a side garden salad with butter lettuce, baby carrots, cucumbers, and celery with balsamic vinaigrette. Earlier this afternoon I opened a new jar of creamy almond butter by Maranatha — O M G sooooo good! I probably ate 4 tablespoons. I’m not sure if I just haven’t had it in forever or if I really love this brand, either way it’s addicting. Sooo as this rate I don’t think I am going to go the gym tonight. My foot has been acting up all day and I really want to stay off of it as much as I hate to say that. Oh welllll new Teen Mom tonight at least!
