Tonight for dinner I made a big pot of homemade lentil soup. I literally started this baby around 3pm and let it simmer on low for hours. I think it came out amazing! I especially love it because I used the ham leftover from Easter that my mom gave me. She made this amazing spiral ham, and of course ham off the bone is always so much better than anything other kind. This was a super flavorful batch so I am glad it made a lot that I can freeze for future meals. Yayy for convenience! So I am still on a high from finding out my rotation schedule this afternoon. I have basically been talking about it with different people for hours. I definitely need to crack down on studying for radiology sooner rather than later. I am pretty nervous about my midterm tomorrow since our last quiz was a lot harder than I was anticipating. This has twice as many questions and is given on a computer again so it will be interesting for sure. Off to hit the books!

Today is the day I decided I would start blogging. My initial plan is to make this a food blog, although I am sure it will turn into more of a life blog if I stick with it. I have been following a few people’s food blogs that I stumbled upon and found myself really enjoying them. I check everyday to see what they are eating and if it’s something I would like to try. More times than not it is.
Ok, quick recap of my life. I just finished the 1st year of my Master’s program last week. It is a vigorous hard science curriculum and I’m grateful having completed it since I will be better able to prepare for my DAT which I plan to take at the end of the summer. Yes, I am applying to dental school! That is a stress in itself haha. I moved to a new (big!) city last summer and am still getting adjusted. I am trying to find out who my friends are and what I want to be involved in, but it’s super hard when school is so demanding. But what I really need to work on is eating healthier!
Since high school I have gained a decent amount of weight. I have become much less active and rarely say no to foods I want. I really just need to make a lifestyle change. Well now is the time! To be honest, I have been thinking about this for a while and have been waiting for the right time.. well there never is a right time! Nevertheless, here I am :)
My plan is to try to take pictures of every meal I eat. I’m sure I won’t capture every one but there is something about grasping every color and detail of food that captivates me. After following a few food blogs, I am so addicted. I just need to do it! I am hopeful that I can choose to eat healthier since this blog may be a form of accountability. Wish me luck!
