Homemade Beef Stew with Veggies April 29, 2012

Today for lunch I am having homemade beef stew with veggies. I planned to eat this for dinner last night but I wasn’t feeling well and then I had to go babysit. I picked on some goldfish while I was there and felt a little better so that was good. I got home pretty late though so I am really tired today. I wanted to sleep in but I got a few texts nice and early since most people know I’m up with the crack of dawn usually. Not today blahh! Sooo I forced myself to get out of bed and do some work. I basically finished my powerpoint for my community service presentation which is something I wanted to get out of the way. I am meeting my group tomorrow morning at 11am to review what we have and make it into a cohesive presentation. Hopefully I won’t need to change too much. Otherwise I really need to get cracking on oral boards. Now I have to head to my softball game then going to the boys to work on school work before we go out for dinner!

 

Strawberry Greek Yogurt, Sliced Pear April 28, 2012

Breakfast this morning is a strawberry Greek yogurt with a sliced pear. This pear was soooo delicious and juicy yum! I really miss living home sometimes and going over my grandparents everyday and eating pears off their tree. They give me boxes when I go home but it’s still not the same. Someday when I have a yard I need to have at least one fruit tree. In fact, my brother planted an apple tree from seeds from a legitimate apple when we were young and it really grew. Last year it produced three apples ha, but my mom said this year there’s at least 17 flowers so we should be getting more. They are still unsure what kind of tree it is but it still excites me — more so because of how it began. Well today is the PA Olympics where my school competes against the 4 other Philly PA school in medically-related events (i.e. speculum egg rage, dodge-the-fly ball etc.). It is pretty cold out but hopefully it will be fun. Home later to babysit tonight!

 

Homemade Beef Stew with Veggies April 27, 2012

Tonight for dinner is the same as last night — beef stew with potatoes, carrots, and peas. I am glad I had this made because I wasn’t really in the cooking mood. I was going to eat before my game but I wasn’t that hungry so I figured I could wait until I got home. It was freeeeezing out tonight. The wind was seriously vicious. Our game was still pretty fun though, minus the wind really carrying the ball so we were running all over. We lost the game but it was such a shame because we were tied in the last inning then they hit like crazy! Oh well, it was a good game. We missed our opening day on Sunday because of the rain so I’m sure we’ll have to make that game up at some point. I didn’t get much work done this afternoon either because I napped and then I was just lazy. Tomorrow I have to get up early since it’s the PA olympics and I’m getting picked up at 9am. I hope it’s a fun day!

 

Scrambled Eggs with Ham & Cheese, Sliced Green Bell Pepper

Today for lunch I made two scrambled eggs with honey ham and shredded mozzarella cheese with a sliced green bell pepper. First off let me just say I fully acknowledge these eggs look gross. I had more ham than I planned on using but I wanted to finished it up. Then I was unpacking some groceries while it was cooking so it got a little black (which I actually love) and then when I added the eggs the black got on them too, and well the ham over took the whole dish. Then I sprinkled a little mozzarella on there and waaa laaaa. While it doesn’t look like much it tastes phenomenal. I just love eggs!! Well I am sooo glad to finally be home. I know I only had 4 hours of lecture today but it was brutal. It was all in nephrology and there were tons of calculations and balancing and blahh I am not fan. This test is not going to be easy that’s for sure, but at least I have 2 weeks to study for it. Time to relax before my game this evening!

 

Multigrain Waffles with Fresh Pineapple Chunks & Kiwi Slices

This morning for breakfast I am having two multigrain waffles topped with fresh pineapple chunks and kiwi slices. I completely forgot I had a few waffles left so I was glad I found them. I absolutely love homemade waffles and really want to buy a waffle maker someday. My parents have one they maybe used twice that I’ve tried to steal before but my mom seems a little attached so it’s a no go there. Oh well, someday I’ll have one. I think next time I’ll buy some flavored frozen ones. I enjoy the blueberry but my favorite is the cinnamon toast. I basically never buy them because I’ll eat an entire box in maybe two days just because I know I have them and they are that good. I think I am going to run to the grocery store for a few things after class today. I definitely don’t need a lot but I’m out of some staples I want to grab. Hopefully class will get out a little early today since it’s about 90 some-odd slides for a 4 hour block. A girl can only hope ;)

 

Homemade Beef Stew with Carrots, Potatoes, & Peas April 26, 2012

Tonight for dinner I made beef stew with carrots, potatoes, and peas. I threw these in my crock pot early this afternoon with chopped onion, garlic, water, salt, and pepper and then basically forgot about it. Then I did a bunch of school work but the aroma from my stew had be craving it early. I wanted to make sure the meat was really tender so I let it cook for a while and I’m sooo glad I did. It came out great! It is a little chilly this evening too so it was the perfect thing to warm me up. Now I have no desire to do anything else related to school and I might now. I think I am just going to finish my write up and then watch Grey’s Anatomy later — hopefully it’s a good episode. I think I used to like it more in the beginning but it’s still pretty good. Tomorrow is Friday though yayyy! I feel like that is all I look forward to anymore. I only have class 8am-12pm too so it should be a relatively easy day :) P.S. I checked the last time I made stew, and saw that I made it this exact date in 2011 oh the irony!

 

Green Monster Smoothie

Today for lunch I made a green monster smoothie with 3 handfuls of baby spinach, a frozen banana, ~8 pineapple chunks, unsweetened vanilla almond milk, and 1/2 scoop of vanilla whey protein. I didn’t add any truvia this time since I figured pineapple is super sweet and it came out amazing! I really just love these and am sad I am now out of spinach. I’ll have to pick up more soon. On a good note, we got out of lecture an hour early which was perfect for my lunch-at-home plans. I had my juicy pear earlier to hold me over and I wasn’t even really that hungry when I got home. I figured I should eat something since I just stuck my dinner in the crock pot and I won’t be eating until later tonight. This was perfect! Anyway, my radiology quiz was hard this morning which wasn’t fun. I’m patiently checking grades to see if they posted, but maybe it’s better I don’t see my ha. Ohhhh and today I booked my flight for one of my away rotations. It’s actually not until September but I have been checking prices every single day for weeks and this was the cheapest I’ve seen it ever so I went with it ahhh. Hopefully, I pass my oral boards so I can go on rotations AND I hope my schedule doesn’t get changed since that would stink to have to pay to change it. Alright time to hand write my SP for tomorrow!

 

Cheerios with Almond Milk + Kiwi Slices

Today for breakfast I am having a bowl of Cheerios with unsweetened vanilla almond milk and a sliced kiwi. I bought these kiwi over a week ago and they are taking forever to get ripe. They still aren’t where I want them to be but I still wanted one today. I am debating if I’m going to pack a lunch today since I have class until 2pm without a break. I secretly am hoping we get out early but if we don’t I’ll be famished blah. I think I may risk it since I don’t feel like thinking about what to pack — I may grab a ripe pear I have been eying up lately for good measure though. So I have my radiology quiz at 8am. It is on the computers again so hopefully there won’t be a disaster like last time with us all having to end the exam and go take it on paper. I hope it’s not too hard either, we learned a ton of new stuff. I feel like I understand it for the most part though. Alright, I must review my powerpoints a little bit more before I heard to school. Ttys!

 

Breaded Shrimp, White Rice with Veggies April 25, 2012

Tonight for dinner I made breaded shrimp with white rice and carrots/peas/mushrooms. I prepped the shrimp earlier by coating them in whole wheat flour, dipping in egg, and breadcrumb/panko mix. I added a bunch of spices too and they came out amazing. I was thinking about sauteing them but I actually ended up baking them in the oven topped with a quick spritz of nonstick cooking spray and they came out amazing! The boy loved them too! Wow I will definitely make these again. I am glad I have (a few) leftovers. The rice/veggies were just frozen since my green beans I bought last week went bad and I had to toss them, so depressing. My oncology test today was really hard too, but I do think I know what to diagnosis my SP with so that’s slightly good (although his assessment isn’t eeek). So now I am just going to review radiology a bit more and then some quality time with the best boyfriend ever. Friday is almost here!

 

Fish Sticks, Cucumber Slices

Today for lunch I am having the last of my fish sticks with a sliced cucumber. I’ll probably snack on a piece of fruit later but I didn’t want anything else right now. I also prepped dinner a little early too which I never have time to do. Luckily, my schedule allows me to come home and eat lunch/shower/study before going back to school for my SP. My oncology test was pretty hard today but I knew it would be. I’m just glad it’s over worth. There was some easy ones and others I just couldn’t decide between two. Oh well, let’s hope I picked the right one most of the time. Otherwise now I’m just making sure I am ready for my SP while I go through all of my radiology slides for my quiz tomorrow. I hope it is more new stuff than old since that is what I will be focusing on. I kind of hate that every quiz and test in radiology is cumulative. I guess it makes sense, it’s just hard to remember everything from weeks ago. I shall try my best!
