For lunch today I packed light tuna, two mini whole wheat pitas, a sliced green bell pepper, and a golden delicious apple. I am getting pretty low on food for breakfast and lunches so I may need to get to the store tomorrow. I am too busy today with class, running home to shower, then babysitting at 5:30pm for a skip in time, and finally meeting the boyfriend for a quick dinner. Thankfully tomorrow I actually don’t start class until 11am which is joyous. I am thinking about going into work study around 9am though since I went yesterday and it was definitely good to show my face/be involved. Everyone in the lab is getting prepared for their upcoming conference in San Diego, CA. Oh how I wish I could go back! They leave in less than a month and I’m sure it will be a blast. Meanwhile, I will be stuck in classes each and every day. 4 months and counting until rotations though — all I have to think about :P

Strawberries & Cream Oatmeal with Omega Trek Mix
This morning for breakfast I made Oat Revolution strawberries and cream instant oat meal with fat free milk topped with TJ’s omega trek mix — sooo good! I loved this and definitely need to eat oatmeal more often. So I ended up staying up later than I would of liked to researching some things so I am super tired today. I wanted to get up early and shower but I guess that will have to wait until after class ooops! Today I have class 8am-2:30pm so another lunch packing today. No sandwich allowed this day. I should try to make salads more often, or at all. I used to be really into bringing them but then I went through a phase where I didn’t eat the lettuce/spinach soon enough and it kept going bad and then I was mad I was wasting it. I think I am going to take another stab at it though. I can see the sun peeking up already so I hope it stays out alllll day. I am ready for summer baby!!
