Spaghetti & Turkey Meatballs with Mushrooms March 5, 2012

Tonight for dinner I made whole wheat spaghetti with pasta sauce (from my hometown Italian church) and sliced mushrooms topped with homemade turkey meatballs. I always make enough pasta for about four people when I only feed myself so I really tried to limit my portion to one and bulk up my dish with mushrooms and meatballs. I was surprisingly really full after this and definitely loved it. I wasn’t too full or anything, just enough. I don’t normally buy whole wheat pasta either because I don’t like it as much as white but I think it’s just in my head. This was pretty tasty! I was able to get through all my notes this afternoon so I am hoping I can attempt to get through them at least half of them again tonight. I don’t really enjoy cardiology. It’s super tricky and there is so much going on, but it’s definitely important especially with the elderly population so I am trying to learn as much as I can. Turkey Club Panini, Apple Slices, Celery Sticks

Today for lunch I made an oven roasted turkey club sandwiches on three pieces of whole wheat bread with light swiss and sliced apples with sides of more apples and celery sticks. It was great! This is honestly the first time I have ever used my roommate’s panini press in the 1.5 years she has lived here. I have no idea why either, it works in a few minutes and makes everything better. It melted my cheese, softened the apples, and warmed up the turkey, not to mention the obvious crispy outside — loveeee! I will definitely be using it again. I think this sandwich would be amazing with a slice of cheddar cheese (instead of light swiss) with some honey almond butter so that might be my next stab at it! I got out of class a little early today which was nice. Now I get to dive into studying for more cardio. Let’s just say I’m glad this test is Wednesday and not tomorrow.

 

Pomegranate Greek Yogurt

This morning for breakfast I am having a Chobani pomegranate Greek yogurt. Usually I have a piece of fruit or something too but I am trying to ratio my fresh stuff so I am going to stick with this. Besides, I am planning to stop at Dunkin Donuts and get my free iced coffee so that will account for a few empty calories. I think today I am going to go with the French vanilla, hopefully it’s yummy. I can’t believe it is Monday already. I must say that I love this semester how I am finished most days in the early afternoon. Finishing at 5/6pm last semester was just brutal. Today I have class 9am-1pm which I think is perfect. Four hours of class then I can come home for lunch, love it! Alright, I have to get moving so I have time to stop at DD without rushing to class. Wishing everyone a great week!
