Tonight for dinner I am having some more of my broccoli cheddar soup. I added some more chopped broccoli to it since I love the chunky consistency. It has been gross and rainy all day so it is the perfect day for a hearty bowl of soup. Andddd the boy joined me this evening which always make it better. Luckily, I only ended up having an hour of class today, but I went in early to do work study and stayed a few hours later with two friends to go over the EKG packet we have to complete by Friday. EKG’s are tough! They are definitely doable but I’m not sure we learned/have been exposed to enough yet to be tested on them but hopefully I can get a good grasp before my exam next week. Did I mention I’m ready for the weekend? Off to lay low for the rest of the evening :)

Shrimp Scampi with Broccoli Over White Rice February 28, 2012
Tonight for lunch is the last of my shrimp scampi with broccoli over white rice. I love this and I love it even more because I didn’t have to cook it. My roommate and her boyfriend always cook dinner on Tuesday nights and weekends so I try not to cook then so we aren’t all wanting to be in the kitchen at the same time, so I am glad it worked out this week. I had the longest day ever at school today ugh. It was really sooo bad! I am not used to sitting in lecture that long since before Christmas and I didn’t like it one bit. Tonight I need to start studying a little bit for my genetics quiz on Friday as well as review a packet of EKG’s I have to have finished by Friday as well. I am staying after class tomorrow to review them with a few friends but I want to take a stab at them myself first. Ohhh joy!
Turkey & Spinach Sandwich, Green Bell Pepper, Apple
For lunch today I made an oven roasted turkey and spinach sandwich on toasted whole wheat bread with a sliced green bell pepper and an apple. Back to my normal run of the mill lunch ha. I haven’t had it since last week so that’s a feat, although I am still super bored at the thought of it. For some reason I have been snacking like crazy so I need to stop that and actually eat healthy, filling meals or at least have healthy snacks. I hate how I get into these ruts all the time, and lately it’s been hard to get out of, especially since Christmas, which no longer can be an excuse since it was 2 months ago. I think tonight I need to go the gym or something. I must get moving! Alright, now I need to get to school. Have a great day!
Multigrain Waffles with Fresh Strawberries
This morning for breakfast I am having two multigrain waffles with fresh strawberries. Pretty tasty if I say so myself! Well today I have my pharm quiz at 8am so I have to get moving. I like to make sure I am there early before any type of exam. Then I have class all dayyyyy until 4pm booo. I am used to getting out by 1pm or earlier so this 4pm thing just isn’t cool, but at least it is only today. I can’t even believe it is almost March, like where did February go? Time is really flying since I started PA school last June. Sometimes I think school is dragging but when I look at the big picture it’s definitely not. I believe it’s 167 days until I start rotations (only because we now have a countdown in our lounge at school) so that’s nuts too. Yayyy for time actually moving! Ok, time to pack a lunch!
Cheddar Broccoli Soup, Sliced Cucumbers February 27, 2012
Today for lunch I am having a bowl of cheddar broccoli soup (Bear Creek packet) and sliced cucumbers. Sooo good! Well I only had class 8-10:15am today which was amazingggg! I love early days because I can get lots of stuff done at home. I also love not having to pack a lunch. I might even need to nap today since I actually stayed up to watch all of the Oscars. They were fun to see, I especially love checking out all of the dresses :) I basically didn’t blog this weekend because I was lazy and it was the boyfriend’s birthday so we ate out a lot and at random times. I was happy to be with him while he rang in 26 ahhh! I am officially dating an older man again ha ;) So I just need to stay on top of my cardiology lectures and study for my pharmacology quiz tomorrow on hypertension. I am thinking it will be ok. Now I really want something sweet and I have nothing — baking may be in the near future here lol.
Shrimp Scampi with Broccoli over White Rice February 24, 2012
Tonight for dinner I made shrimp scampi with broccoli over white rice. I cooked this a little earlier this afternoon since my roommate’s boyfriend always spends his weekends here and they frequently cook together so I wanted to get my food cooked beforehand so we weren’t all in there at once. I have two portions for the future which is nice too. I feel this is a well balanced nutritious meal. I am so over white rice, but I had these two huge boxes that I was ignoring since I have been enjoying brown rice more but I figured I need to use them up. This is a good way though, and I have a stir fry planned in the new week that I will use it for again too. Then I am babysitting this evening at 7:15pm. Hopefully the kids will go to bed early and I can spend some time relaxing/studying. Boyfriend’s birthday tomorrow yayyy! Big 2-6!!!
Homemade Mushroom/Spinach Ricotta Pizza
Today lunch I am having the last of my mushroom and spinach ricotta pizza. It is sooo good! I am glad I made it on Wednesday because it worked perfectly for a meat free Friday too. Class went pretty today and I am glad it’s over ha. I definitely need to review cardio but I’m not as worried since the test isn’t for a week and a half — not a good mentality ha. I am going to relax a little this afternoon then study before babysitting tonight. It’s such a crummy day so I don’t actually even mind babysitting. The kids are always good anyways. I remember hearing there was something I wanted to watch on TV tonight and thinking oh yay I can actually watch it because the kids will be in bed but I can’t think of it for the life of me. Hopefully it will dawn on me soon or I will recognize it on the guide. Off to enjoy my pizza!
French Toast with Fresh Strawberries
This morning for breakfast I am having two slices of whole wheat french toast topped with sliced strawberries. I haven’t had french toast in ages so this was really enjoyable. I woke up before 6am today for some reason and could not get back to sleep. I am trying to take out less loans for school next year and I have to figure it all out now since the FAFSA is due in the spring. So in addition to lots of babysitting, maximal work study time, and limited spending, I am trying to sell some books I don’t use anymore for school. I woke up thinking about my listings ha how silly! In college, I used to sell books all the time but I haven’t in years so I figured it was about time. I always save my books thinking I will reference them again and then years later as they collect dust I’m like whatever I’ll just sell them and then like only get 1/4 of what I paid, oh well! Time for school, TGIF :P
Mushroom/Spinach Ricotta Pizza, Apple February 23, 2012
Lunch today I packed two slices of homemade pizza from yesterday — mushroom and spinach ricotta with an apple. This was super filling for lunch yesterday so I’m sure it will hold me over today too. I am very much ready for this week to be over. Even though I don’t have a ton to study for or assignments do it’s still been pretty long. It could have to do with the fact that I literally haven’t seen the boy all week because he is super busy with work. His birthday is Saturday so I can’t wait to see him and celebrate his big day. Alright, I have to run and clean up my room. Our leasing office is showing our apartment today to the bank and management company since our apartment is apparently the nicest one in the building. Don’t get me wrong, I feel comfortable living here, but 95% of the common room furniture is my roommate’s and let’s just say I would decorate a lot nicer different had I done it my own ha ;) And I’m off!
TJ’s High Fiber Cereal with Strawberries
This morning for breakfast is a bowl of TJ’s high fiber cereal with fat free milk and sliced strawberries. Love it! Today I start class slightly later at 8:30am which is a nice change, although I go until 4pm so I do have to pack a lunch. I am hoping we get out early but we’ll see how it goes. I definitely have to read my EKG book tonight. Also, I have a meeting with my softball team before the season gets started soon so it will be good to see everyone. I really need to get my butt moving too so I am excited for the season to start. I doubt I will be able to play next year since I will be on rotation so I have to enjoy it while I can this season. I really love playing so it will be awesome to get out there and play again, especially with all this crazy warm winter weather we have been having. Maybe we can practice earlier ;) Alright, time to pack something lovely for lunch..
