A Grad Student's Journey Toward Healthy Eating

Garden Vegetable Lasagna, Yellow Bell Pepper June 1, 2011

Filed under: Dinner — Maria @ 7:24 pm

Tonight for dinner I am having Trader Joe’s garden vegetable lasagna and a sliced yellow bell pepper. I always buy Amy’s vegetable lasagna but TJ’s is pretty good too, and if I recall it’s a little cheaper too. I definitely need to get to TJ’s soon. They have so many awesome products that I love. I initially planned on cooking something else for dinner but I couldn’t bring myself to turn the oven on in this 94 degree heat. So today was my last Wednesday with the girls. It was a little sad. They hugged me literally all day. I will definitely watch them periodically in the future though, but I am sure I will be busy with school so hopefully they ask me at night more often so I can hang with them a little and still get some studying in. Just relaxing at the apartment tonight, missing the bf!

Ham & Cheese Sandwich, Cucumber Slices, Pear

Filed under: Lunch — Maria @ 7:33 am

For lunch today I packed a smoked ham, light swiss, and lettuce sandwich on toasted whole wheat bread with cucumber slices, and a pear. Sometimes I honestly think it is too hot to eat and today is definitely a contender for one of those days. It is supposed to be in the 90′s today!! I wonder if we will go to the park. I might need to invest in some sun screen with all these super hot days we are having. I walked into my mom’s work the other day (wearing shorting and a t-shirt) and the first thing one of her customer’s said to me was “well looks like you haven’t spent much time outside” ha! Sooo needless to say I am white as a ghost and need some color. Happy June!

Fiber One Cereal, Banana

Filed under: Breakfast — Maria @ 7:11 am

This morning for breakfast I am having a bowl of Fiber One cereal with Silk Pure Almond original almond milk and a banana. I am not a fan of regular Fiber One at all. I greatly prefer Trader Joe’s brand, but I picked this up yesterday since it was convenient and we don’t have a TJ’s at home. It’s super important I get my fiber in since I definitely overate this past week I was home. Well today is my final full day babysitting my little girls. We are all super sad. I gave the mom a copy of my schedule for the summer so she said she’ll definitely ask to me come on days I have the morning/afternoon off so this won’t be the last time I will see them. I guess it is just a little symbolic. Now I have to pack my lunch, for the first time in a week!
