Tonight for dinner the boyfriend and I order a Campagnola pizza which consisted of broccoli, spinach, mushroom, and mozzarella cheese. It was soooo good! I never ordered pizza from this place like a half a mile from my house but we decided to try it out tonight — omg soo delicious. Clearly, we downed the entire thing. Andddd ironically while there picking up our food, I ran into a girl I went to highschool/college with who is 2 years younger, but is dating a guy who graduated from highschool/college with me and apparently moved into my apartment complex in May. What a small world! So hopefully we can get together at some point because he is a cool guy. Now we are just hanging in watching the PGA tournament since it’s at the golf course the boy works at. I’ll be going on Sunday to watch the last day of the AT&T tournament. I hope I get a peak at Tiger ;)
Lunch today is a ham and light swiss sandwich on toasted whole wheat bread with a sliced green bell pepper and red snappy grapes. I am beyond pumped to eat these grapes today. My class is playing kickball tonight at 7pm. I am not sure if I will join since I want to legit hang out with the boy. Also, I hate to always bring him to school related stuff because then it seems like we are attached at the hip and I’m not into women who always need a man around ha. I am thinking I might be too exhausted after having class from 8:30am-6pm. Today is my Friday whooo hoooo!
Breakfast today I am having a Chobani pineapple Greek yogurt with fresh blueberries. I still barely have any food but the boy texted me yesterday after saying that he was having the most crisp grapes ever and I wanted them so bad. So I ran to the store super quick after class and grabbed some grapes. I also picked up some blueberries and yogurt too. I probably should have bought more but I had to get home because I had a lot to do. I definitely will get to the store this weekend for good. This morning I have my physiology exam review at 8:30am. I wasn’t planning to go but now I think I am going to try to since it’s the first one and I want to see what exam reviews are like. I still have barely any options for lunch.. off to scrounge something up!
Summer Salad June 29, 2011
Tonight for dinner I went out to eat with the boyfriend and a family friend of his who is staying with him for the week. I ordered the Summer Salad which consisted of mixed greens, spinach, broccoli, strawberries, blueberries, and grilled chicken in a honey apricot vinaigrette. It was sooo light and delicious! Anddddd we ate outside tonight since it was gorgeous :) The boy’s friend was hilarious and super cool. It was nice to eat out with someone new for a change. Tomorrow is a long marathon day again with 5.5 hours in the cadaver lab and 3 hours of lecture booo. I do have a 4 day weekend though so I am not really complaining. I cannot wait to relax a little bit this weekend and catch up on some work. To tomorrow being my Friday!!!
Today for lunch I am packing broccoli and & cheese (Green Giant) with House tofu shirataki spaghetti noodles, an apple cinnamon rice cake, and a chocolate and vanilla pudding. Such a random combination (you should see how empty my kitchen truly is!). I never used to have issues with running out of food and now I do all the time. I guess it is because I am so busy with PA school. It is definitely a good thing though. I cannot even believe it is almost July. Seriously, where is time going? I miss cooking and baking new things all the time. I will have to re-assess so I can still do so. I barely read anyyyy blogs anymore and have about 4 cooking magazines that I subscribe to and have yet have time to read. I just have to keeping telling myself the first 14 months of this program are going to be vigorous but it will be worth it in the end. Off to anatomy lab — today is the lower limb part 1!
For breakfast this morning I am having Kashi honey and cinnamon instant oatmeal made with frozen mixed fruit (mangoes, pineapple, strawberries, and peaches). I still have to get to the store so this will probably be the only fruit I eat the next day or so. Luckily, it still tastes delicious once it is defrosted ha. Today I only have class 9am-3pm, which is soooo much better than 6pm. Yesterday was ridiculously long, and tomorrow will be as well. Fortunately, I got my to-do list of 9 things down to 1 which makes me really happy. I wanted to listen to 2 lectures last night but only made it through one since I am such a perfectionist at typing. Tonight I have dinner plans with the boy and a family friend of his who is in town, but hopefully I can get some down before I head out.
Chicken Strips, Green Beans & Potatoes June 28, 2011
Tonight for dinner I made chicken strips with egg substitute and Italian breadcrumbs with green beans and potatoes. This was delicious! I rarely bread my meat anymore but I forgot to marinate the chicken so I thought it would be good to switch it up. It was a super long day of class and tonight I need to re-listen to an anatomy lecture and 1/3 of a physio lecture. Two friends and I are going to split up all the lectures and share our notes our google docs so we don’t all have to re-listen to everything. I used to write my notes by hand but I’m giving this system a try. I have a feeling I like it already. I will probably start it right after I finish eating so I can relax a little bit later on in the night. My professor moved our Friday lab to Thursday afternoon so now we have Friday off and a 4 day weekend :) Sooo 2 more days this week, I can do it!!

I am glad I had 2 peppers left and some green beans so I have some fresh foods to work with for meals today. I am all about freshness all the time. I just need to figure out new ways to incorporate them into my bagged lunches for school. I also need to brainstorm more fun dinner ideas. School is just really overwhelming right now so I’m not sure when I will have time for that. I know I can make time though. Today is a full day of classes/lab from 9am-6pm. I am always starving when I get out. Luckily, I have no plans tonight so I can just relax and maybe re-listen to some lectures. The fun life I lead ha!

I literally have no fresh fruit left so I had to defrost some from the freezer. It surprisingly is pretty good and with my yogurt is particularly yummy/fruity. Since being away for the weekend I don’t have much food left. Maybe tonight I will go grocery shopping. I need to get back to healthy eating. I ate pretty terribly in San Diego since the guys needed to try In ‘N Out Burger, real Mexican, Jack In the Box etc. I am jealous they are still there until Friday, but glad I made it back on time for my Physiology test yesterday at 3pm. I took the red eye home and landed earlier so I didn’t want to ask anyone to pick me up at 6am soooo I took a plane, train, and bus home ha. Then I was awake for 36 hours straight! Record for me! Ok lunch eats..
Waffle, Scrambled Eggs, Bacon June 25, 2011
Today for breakfast I had a waffle, two scrambled eggs, and some bacon. It was delicious! I can’t believe I am in San Diego!!!! It is sooooo beautiful here. We stayed out soooo late last night and it felt even later since we were on Philly time. We had a blast though! The guys are so great. After breakfast I drove (the black HUMMER H3 we rented — yes I felt beyondddd cool haha) to Imperial Beach over the Bay Bridge and it was unbelievably beautiful. I put my feet in the Pacific ocean for the first time ever and I loved it. We are going to hang out posters up at the conference at 3pm and are going to hang out at the beach for a few hours. My professor wants to show us his favorite one, Point Loma. I am definitely going in the water. Off to check out some shops a few blocks away!!
