Tonight for dinner I’m having my last pulled pork barbecue sandwich on a whole wheat bagel thin with a side salad of spinach, strawberries, Laughing Cow light swiss, and my homemade sesame poppyseed dressing. It was all delicious! Now I am off to pack for home and the beach. I’ll be spending a few days at home before I head to the beach with my family so I have a lot to make sure I remember. I would like to leave right from the lab tomorrow if possible but we’ll see how packing goes this evening. Hopefully I won’t forget anything!
Today’s lunch is more of my homemade guacamole with some Trader Joe’s organic round corn tortilla chips, a nectarine, and half a cucumber. My guacamole is starting to get a little brown but it still tastes good. I have one serving left and I haven’t decided if I will eat tomorrow or chuck it before I head home, we’ll see. I’m sure I’ll be hungry in a few hours too but I’m going to try and keep busy. I got my new microwave stand I really like it. It fits in perfectly with my white kitchen so that’s exciting.
Today’s breakfast is almost the very end of my berries — a big bowl of fresh strawberries, blackberries, and blueberries with Chobani pomegranate yogurt and flax seed. I am very aware that flax seed needs to be ground to receive any nutrients from it but my little chopper will not grind it for the life of me. Needless to day I am just going to try to chew hard and long and break them down and hope I get a little tad bit of something nutritious haha. Ok, eating quick then going to buy some bungee cords before I go pick up my new microwave stand. Cross your fingers it fits in the trunk of my car!
