A Grad Student's Journey Toward Healthy Eating

Banana Soft Serve with Dark Chocolate Chips July 25, 2010

Filed under: Snacks — Maria @ 7:00 pm

My little snack this evening is some classic banana soft serve “ice cream”. Since I have a particular sweet tooth today I decided to add some Hershey’s special dark chocolate chips to my banana bonanza. These are heavenly! I’m not quite sure what stopped me from eating the entire bag. I love that they gave my ice cream some crunch though, it was a nice twist. Have a wonderful evening all!

Pulled Pork Sandwich, Butternut Squash Fries, Cucumber

Filed under: Dinner — Maria @ 5:22 pm

Dinner this evening is another pulled pork sandwich on a toasted whole wheat bagel thin with butternut squash fries and some cucumber slices. This sandwich is amazing! I will have to add pulled pork to my ongoing list of favorite sandwiches. So I was quite exhausted after the game even though I didn’t play it in. It was just so hot out it was unbearable. Believe it or not I drank 4 bottles of water in 2 hours! After the game, I came home showered and took a nap. Then I woke up starving so I am having dinner a little early as well. Now we are having some (much needed) torrential downpours. It’s so dark out I also feel like I should be getting ready for bed ha. I’m sure I will hit the sack early anyway!

Shrimp Scampi with Broccoli/Brown Rice

Filed under: Lunch — Maria @ 11:33 am

I’m having a slightly early lunch of shrimp scampi with broccoli and brown rice since I want to eat before I go to watch the All Star game. I’m sure people will have snacks and drinks there so I want to make sure I’m not starving when I get there and want to pick. I put a few waters in the freezer this morning too so I can keep cool and hydrated while I’m there. It’s just so hot out already man, I think I’m going to wear a little cotton dress since it’ll be light. I hate getting dressed on days like this. Hopefully it will be fun though and I can relax a little before I have to come back here and study =/ Catch ya later!

Oatmeal with Blueberries & Cocoa Roast Almonds

Filed under: Breakfast — Maria @ 7:50 am

Breakfast today is my lovely Kashi GO LEAN honey & cinnamon oatmeal with 1/4 cup of blueberries, 1/4 cup of Oikos vanilla Greek yogurt, a little water, and some cocoa roast almonds on top. I am getting pretty low on my oatmeal stash so I am going to need to start gallivanting around to find (& stock up on) my favorite brand/flavor since it is pretty scarce in this neck of the woods. Well this morning I am planning to get a few hours of studying in then after lunch I am heading to the All Star softball game at the league I play in where 3 members from each team make up 2 teams and play each other (for fun pretty much!). I want to go support the girls from my team and see everyone for the last time this summer since I can’t make the banquet. Hopefully the heat won’t kill me today!
