Black Bean Brownie with Blackberries July 21, 2010

Tonight I am having another one of my black bean brownies with some fresh blackberries. I have been waiting for this baby all day ;) I am glad I can actually be satisfied with one as well. So tasty! I am going to try to read another chapter tonight and maybe do some online quizzes since the reading really tires me out/bores me. I just finished making dinner for tomorrow night since I have to babysit all day and will get home and be famished. I am always so tired and hate having to cook after a long day running around after the kids so I’m glad I remembered to make something. I actually will end up having it for 4 meals because the recipe made a lot — one of my favorite meals my mom makes. Check it out manana! Ok well have a good night ya’ll :)

P.S. A week today I am getting my hair chopped off (at least 10 inches) for Locks of Love ahhhh!!

 

Haddock, Butternut Squash Fries, Green Beans

Dinner this evening is a baked fillet of haddock seasoned with a little Italian breadcrumbs, garlic powder, onion flakes, parsley, salt, pepper, and lemon juice. Then I baked some butternut squash fries with nonstick cooking oil, garlic powder, salt, and pepper and am having the last of my leftover steamed green beans. This is was great meal! I miss having fish and am going to try to have it more often. When I lived home my mom would make it like once a week and I always enjoyed it. So I am still trucking through bio although I did turn the TV on at one point and got a little side tracked. Tonight I’m hoping to get through a few more chapters even if I don’t want to since I have to babysit all day tomorrow. Fun fun!

 

Tomato Ricotta Stack & Celery

Today’s lunch was inspired by something I saw on Food Buzz a few days ago. The original recipe used goat cheese and balsamic vinegar but I used what I had in my kitchen. I sliced a large tomato into four equal slices. Then I made a mixture of low fat ricotta, low fat shredded mozzarella, garlic powder, and parsley and distributed it on each tomato. I drizzled some light balsamic dressing over each one and then reassembled it into the original whole tomato and waaaalaaaaa! I got this awesome masterpiece. I promise you it tastes just as awesome as it looks. I just love food :) Oh and I had some celery sticks too. And I was able to get some bio reading done this morning and took good notes. Off to plunge on through the afternoon..

 

Egg White Bagel Thin, Strawberries

This morning for breakfast I made 1/2 cup of egg whites and put them on a whole wheat bagel thin with a wedge of Laughing Cow Light Swiss. This is such a great alternative to your average fast food breakfast sandwich and I can’t believe I didn’t try it sooner. Sooo delicious! I am having a few fresh strawberries on the side too. So this morning consists of more biology reading which I am actually going to do today. I am also considering going for a walk later if it doesn’t get too hot out. Happy hump day!
