Mini Turkey Meatloaf, Green Beans, Yams July 19, 2010

Tonight for dinner I tried a new recipe from Cooking Light — Mini Turkey Meatloaves. I made a few minor substitutions based on foods I had but for the most part I stuck to the recipe. Each little loaf (my way) is 232 calories and they are huge! I also made some yams and green beans. I won’t lie I was planning to use my last white potatoes but when I went to get them so were growing lots of eyes and kind mushy.. yuck! I love yams though so it’s no disappointment. Anyway, this turkey meatloaf is out of this world. Growing up my mom never bought ground turkey for anything but I am really learning to like it. This wasn’t exactly like normal meatloaf but still a success! So basically I was a horrible student/studier today and didn’t get accomplished even close what I had planned to. Tomorrow I will be in the lab all day so hopefully that little diversion will give me some encouragement to study afterward. Have a good night blog world :P

 

Pizza, Grapes, Green Bell Pepper

For lunch today I made some little homemade pizzas. I used Wasa Crisp ‘n Light 7 Grain Crackers, Don Pepino pizza sauce, and some low fat shredded mozzarella cheese with a sprinkle of Italian seasonings. They were awesome! The only thing I would do slightly different would be to toast the crackers first before adding the sauce, only because I like a super crispy crust. You will definitely be seeing this from me again in the future though — yum! I also am finishing up my grapes and my last green bell pepper! This was a very filling lunch — all for about 300 calories. Not bad! Well I did get some more reading done this morning but not as much as I had hoped. This afternoon will go better I can feel it :)

 

Waffle with Almond Butter/Bluberries, Egg Whites

Today for breakfast I am having an Aunt Jemima’s low fat waffle topped with almond butter and fresh blueberries along with 1/2 cup of egg whites. This morning I woke up with a huge craving for almond butter so I knew I just had to make something with it and this did the trick! Same plan today.. read biology in hopes of finishing before I head to bed tonight. I think know I can do it!
