A Grad Student's Journey Toward Healthy Eating

Orange Ruffey, Broccoli, Carrots July 9, 2010

Filed under: Dinner — Maria @ 7:17 pm

Tonight’s dinner is a small piece of orange ruffey marinated in teryaki sauce with some broccoli and carrots. I think I will still be hungry later on tonight, although I am going to try not to snack. I want to get a little studying done, at least an hour or two. I am missing my college roomies like crazy today. I wish I was with them. Oh well, soon enough!

Salad, Soup, Sushi

Filed under: Lunch — Maria @ 6:10 pm

Well today for lunch I went out for sushi with an old friend. We used to work together and have been living in the same city for a year without getting together. Needless to say this lunch was long overdue. My GPS got all wacked out too and took me  to the wrong place so I was a little late (which I hateeee!) but it was fine. We didn’t end up eating until about 2pm and we didn’t leave there until around 4:30pm. I did not expect to be gone so long but it was nice to catch up. So I ordered the field green salad with ginger dressing (not creamy), and then a lunch special which consisted of miso soup, a tuna roll, and a California roll. I wanted to get more exciting things but I figured this would be my best bet. It was delicious, as expected! The restaurant was super nice too — it was probably the nicest Japanese restaurant I’ve ever been to. I would go back, now that I know how to get there ha! Anyway, I didn’t capture my soup or salad and I remembered to take a picture of my sushi after I already ate 2 pieces, but you get the gist ;) Light dinner tonight.. coming soon! (Btw my softball game was rained out tonight.. I’m kind of sad because my bff’s are having a fun weekend without me because of these games =/)

Fruity Green Smoothie

Filed under: Breakfast — Maria @ 9:32 am

This morning for breakfast I tried a new smoothie curtsy of a friend. Back in college, my roommate freshman year was the healthiest eater ever. I recently came across a word document she sent me of her favorite things to eat and drink and this smoothie made the list. It is 1/4 of a honey dew, 1 kiwi, 1 tsp lime juice, and she says a packet of splenda/stevia and ice — but instead of those last 2 things, I used half scoop of vanilla whey protein and 1/2 cup of almond milk. I froze my honey dew yesterday and this morning I discovered it needed more liquid so I added the almond milk. WOW! This is soooo good. It is thick and creamy and refreshing! I never would think to add all those ingredients together either. This is a true green smoothie :) Ok study time until my big sushi lunch ahhhh!
